The Cacao Mill by Subko is a bona fide chocolate heaven, but it’s also so much more

By Sadaf Shaikh

The Cacao Mill by Subko Sukbo chocolate desserts

The Cacao Mill by Subko has had many lives. Sequestered in the unobtrusive 2nd Pasta Lane in Colaba —which I’d incidentally never stepped into despite living a stone’s throw away—it used to be a textile mill, which was then converted into a CrossFit box before getting a third lease of life as an art gallery. In its latest—and perhaps most fitting—avatar, it has the distinction of being Mumbai’s first chocolate factory, brought to you by Rahul Reddy, the mind behind the beloved Subko Specialty Coffee Roasters with outposts in Bandra and Byculla.

In the double-storeyed 2,000 square feet space that is The Cacao Mill by Subko, the cacao pod is the undisputed champion—in philosophy, spirit and visuals. Apart from the name itself, right off the bat, you are greeted by the illustration of a pod emblazoned on the facade of the building inside which the chocolate factory sits. Upon entering, if you can manage to focus amidst the intoxicating smell wafting out from the chocolate crafting unit and the craft bakes section upstairs, you’ll notice that the cacao pod is a recurring motif in the design language of the mill, appearing as a plaque when you enter the factory, written in text in various languages on the wall opposite, displayed in a case to honour its geography, delineated on a board to expand on Subko’s pod-to-bar journey, reimagined as merchandise (bag pins!) by Aniruddh Mehta of Studio Big Fat, and featuring in the many portraits hung up on the wall.

When my olfactory urges get the better of me, I find a major gravitational pull from the direction of The Cellar, where the entire range of Subko’s craft chocolate experiments is on display. It feels like I’ve suddenly been transported to the Tundra (the area is temperature controlled in order to preserve the chocolates), but my insides turn warm and gooey when I remember that I have a tasting session ahead of me. Suffice it to say, this is a space that a modern-day, minimalist Willy Wonka could happily abide by. Chocolate slabs—both wrapped in bespoke packaging and unwrapped—are neatly displayed in rows, segregated as per the categories conceived by Reddy and Manali Khandelwal, director of chocolate at Subko (and a real-life Willy Wonka in my opinion). There’s Terroir, which translates to “soil” or “land” in French, named for the various South Indian regions (Andhra Pradesh, Tamil Nadu, Kerala and Karnataka) from which the cacao was sourced. Then there’s the Dark, Milk and White collection, meant to cater to those who value high-quality, but fuss-free flavours. Next, we have the Experimental collection, which sits diametrically opposite to the previous collection in philosophy: here, the bakehouse’s bestsellers like the Cold Brew Chocolate Hazelnut Tart and the Kashmiri Walnut Chocolate Chip Cookie alongside quintessentially Indian desserts like kulfi are reimagined and re-engineered as chocolate bars.

The Filled bars are perhaps the most thrilling creations by Reddy and are designed to induce nostalgia: classic chocolates like Twix, Snickers, Bounty and Reese’s are improved upon (in Subko’s version of the Snickers, for example, the nougat part is equally offset by its crunchy caramel layer) and rechristened Xiwt, Srekcins, Ytnuob and S’eseer—spelt backwards to skirt around copyright issues. Then come the Big Cubes and Small Cubes (my personal favourites and therefore highly recommended), which beautifully combine chocolate with cherry jam, pistachio butter filling, sea buckthorn, Subko’s own SIF kaapi and other gourmet ingredients. Smartly, these have been dissected for display and showcase the jams and compotes oozing out of the chocolate shells so that you feel compelled to reach out with a finger for a little lick (and since that isn’t permitted, purchase six months’ worth of your sweet stash instead). All along, the machines gently clatter in the chocolate crafting unit in the next room, churning and readying the next batch of chocolates; a gentle reminder of Subko’s commitment to transparency rather than a cacophonous din.

Upstairs, diners have already occupied most of the tables although it has only been a week since The Cacao Mill by Subko officially opened its doors. As I scan the menu, slightly overwhelmed by the vast array of choices in front of me, Khandelwal encourages me to sample the Pod to Bar Experience which shines a light on the journey that cacao makes from pod to fruit pulp to unroasted bean to husk to nibs to butter to powder and finally bar by actually allowing customers to taste the plant in each of these stages. When you order the Pod to Bar Experience, one of the baristas or members of staff will actually offer to sit by your side and take you through the whole process at length. I don’t remember much from the sweet stupor I later went into—a solid testament to how good everything on the menu is—but I specifically recall raving about the fudge-stuffed croissant, the pain au chocolat with 39% white chocolate, the sourdough toast topped with melted Brie cheese and 45% milk Minis, and the Subko hot chocolate 70% dark with a toasted marshmallow.

A small cacao plant has been installed in the centre of the space on the ground floor

As I descend the stairs to go home—convinced that there’s more chocolate in my bloodstream than blood—I notice that a small cacao sapling has been planted in the centre of the ground floor. Reddy smiles as I bend down to peer at the sprouting leaves and informs me that, as an homage to their hero ingredient, the plant was specially transported from Varanashi Farms, the Mangalore -based farm from which they source cacao for one of their Terroir bars. He hopes it will grow strong roots and thrive. In an environment that conceives of such heavenly treats and is so true to what it stands for, I’m certain it will.

Prajnay Garg is the Founder & CEO, and Richa Chaudary is the Founder & Product Expert at Darkins Chocolates.

Richa has always been a passionate chef/baker and was always very intrigued by chocolate making. She took Prajnay on a tour down south to the beautiful Cacao farms in Andhra, Karnataka & Tamil Nadu and that is where their chocolate journey began.

Darkins started off with only 4 dark chocolate variants from a small garage and a team of 3 people. They have come a long way to become a well known Indian Craft Chocolate brand across India. This experience is a vision that both the founders have had for a long time.

What does it take to build a chocolate factory in the heart of Mumbai?

Subko founder, rahul reddy spills the beans on the brand’s latest offering—the cacao mill..

chocolate factory tour in india

For starters, calling Subko’s Cacao Mill a chocolate factory in the headline might be a misnomer, for according to Rahul Reddy, founder of Subko Specialty Coffee Roasters, the vision is to champion cacao, rather than chocolate itself. “If Subko was to try and do something around chocolate, it had to be more around cacao. So, there is a distinction in nomenclature we’ve tried to make—that’s why we’ve called it Subko Cacao and have a space called the Cacao Mill, and not a chocolate mill or a chocolate factory,” he explains.

Walking through the tiny bylanes of Mumbai’s Colaba Causeway neighbourhood, you’ll spot the blink-and-you’ll-miss Subko signage. Once you step inside, you won’t find any singing oompa loompas , edible meadows, or a chocolate river flowing down the middle, a la Charlie and the Chocolate Factory . Instead, you will be greeted with a front-row view of cacao beans being transformed into bars, a cafe spotlighting chocolate in its myriad forms, and a tiny cacao sapling thriving in the heart of the space.

Bazaar India sat down with Reddy to get the scoop on what goes into creating a chocolate factory. Harper's Bazaar: Where did the idea of Subko Cacao Mill come from?  Rahul Reddy: About a year ago, we wondered what could be a natural extension for Subko. Before we tried expanding, we wanted to explore a missing piece, and it ended up being, what I consider, the cousin of coffee—cacao. It started with the notion that coffee has an interesting cousin that grows in the same agricultural landscapes and terrains in four states of South India.

HB: The mill is housed in an old textile factory, and the space seems to form a big part of its identity—how did you discover it, and how was the process of converting it into the cacao mill that it is today?   RR: From what I know, this place had a few lives—first an old textile mill, then an art gallery, and a gym. I didn’t look for this space; it came up through somebody. When I was brought here, it was nothing like how you see it today. I realised its tall ceiling and big wooden rafters caught your attention, and there had to be an element of pushing spatial limitations in the centre of Mumbai. People don’t expect to walk into a space like this when they see it from the outside; this ties into our concept of defying your expectations of Indian cacao.

Secondly, new experiences like the Cacao Mill had to have a layer of discoverability that I deeply believe in. We needed the space to be off the beaten path, a space you would put a little effort into finding, if you cared about craftsmanship. Though our in-house creative studio team was involved in the process, we collaborated with Stand designs for the architecture; we’ve worked with them on our last two projects (Subko Coffee Roastery and Craft Bakehouse).  HB: The cacao plant seems to be the star of the mill—with a cacao tree present at its heart, and the branding as well—tell us more about the decision to do so.   RR: I was sure the experience needed to be around the raw material that chocolate is made of. I wanted these visual markers—the cacao pod and the bean—in this space and on our packaging. That explains the cacao plant growing inside the mill and the motifs on our packaging and around the mill. You cannot make nibs without the roasted bean, and you can’t get chocolate without nibs. So, for me, the bean and the pod are essential. We have a responsibility to spread the gospel of cacao first; the chocolate becomes incidental. It’s critical to have these stories told through visual motifs and not talk about chocolate only in terms of deliciousness, which is obviously the end goal. HB: Instead of bean-to-bar, why have you positioned Subko Cacao as a pod-to-bar experience? RR:  This space had to represent the idea that we intervene at the farm level and communicate with multiple farmers across India. We don’t want to solely purchase beans—we are actually visiting farms, looking over the process of fermentation, drying practices, transferring knowledge, and experimenting with the processing.

chocolate factory tour in india

HB: What are some of the local cacao farms that you are hoping to highlight with your offerings?   RR: We wanted to create delicious chocolate and share farm-level stories around it the way we have done with our coffee. Our dark chocolate terroir series requires a minimum of 70 per cent cacao content to qualify, and we have created a multi-location programme with farms across Tamil Nadu, Karnataka, Kerala, and Andhra Pradesh for it. In each of these states, we have at least one plantation with whom we work on micro-lots of cacao that get transformed into chocolate for the series.   HB: How was the process of creating the unique chocolate range for Subko Cacao like? RR: We made our first batch of carbonically-macerated cacao. Carbonic maceration is a wine-making process where you put grapes in a large stainless steel vat, remove all the oxygen, and rotate carbon through the vat for the grapes to ferment in a carbon-rich environment. This method has become quite popular among coffee producers in recent years to create specialty coffee. We believe we are pioneering this technology in chocolate. It creates a plum-y, wine-y flavour. We’re also doing a cool series of projects with Prateek Sadhu and cacao is the first. Sadhu and I are working on sourcing local mountain ingredients and applying that to Subko initiatives. For the first iteration, we made a beautiful jam with sea buckthorn, a Himalayan sweet and sour berry. It went into two different chocolate cubes—one is our take on lemon meringue pie with sea buckthorn, and another almond butter sea buckthorn flavour.

chocolate factory tour in india

Our experimental range acts like a connective tissue between other Subko verticals. For one of the offerings, we have deconstructed a Subko Cold Brew Chocolate Tart into a bar with inclusions—made with a coffee-laced version of Nutella and the signature tart base. Another cool thing we’ve done is a podi milk chocolate, inspired by the chili chocolate combo from Mexico. We also have a version with chocolate as the base, which is then studded with podi and chocolate-coated almonds.  HB: Did the existing Subko Coffee Roastery and Craft Bakehouse have an influence on the Cacao Mill—how did you ensure a synergy between all three?  RR: 100 per cent! We built Subko Cacao Mill so that it could reflect an evolution of the Roastery and the Bakehouse. We applied the same principles in packaging, transparency of the process, and ultimately, the products. For instance, our Bakehouse uses a lot of chocolate and our Roastery uses chocolate in mocha, so everything is integrated.

India’s first Läderach store in Delhi is the Willy Wonka-esque fever dream we needed

By Samira Sood

Indias first Läderach store in Delhi is the Willy Wonkaesque fever dream we needed

“Life is like a box of chocolates. You never know what you’re going to get.”

When Forrest Gump’s mother shared this gem with him, she probably wasn’t talking about a chocolate haven in a Delhi mall. But looking around, I couldn’t help but think of her—for I’m surrounded by such a wide variety of chocolates that I don’t know where to begin!

Läderach Store

Läderach Store

There are boxes filled with assortments of truffles and pralines (dark, milk, white and nutty). There are massive slabs of FrischSchoggi, or fresh chocolate, in flavours such as almond, pistachio, raspberry-blackberry, pink pepper-strawberry and salted caramel, to name a few. Then there are smaller pouches with combinations of these slabs, plus snacks like chocolate-coated orange and ginger sticks; tablets of everything from an Ecuador 70% to a Trinidad 80%, white, blond and milk varieties; and even vegan chocolate cashew popcorn.

Elias Läderach

Elias Läderach

I feel like little Charlie Bucket when he finds a Golden Ticket and enters Willy Wonka’s Chocolate Factory for the first time. Except I’m in Delhi’s DLF Emporio Mall, at the brand-new Läderach—the first Indian outpost of the legendary Swiss chocolaterie. And the man of the hour, Elias Läderach, is far from the mysterious, top-hatted Willy Wonka, whose backstory no one knows.

The tale goes back to 1962, when Elias’ grandfather, while assisting his own father at their family bakery, discovered that his love of chocolate far outweighed his love of bread. He wanted to open a retail store but didn’t have the money for it, so he started working out of his basement, “like the Steve Jobs of the chocolate world,” Elias laughs.

Initially, it was purely a B2B enterprise, during which time senior Läderach also patented his hollow truffles (which is how chocolatiers today can fill their truffles with different flavours). By the time his son, Elias’ father, joined the business, it wasn’t growing as they desired. There were a few large pastry shops and confectioneries, but not enough. It was always the family’s dream to run their own store, and in 2004, they got their chance by acquiring a chocolaterie chain.

“They weren’t producing any themselves, but they were retailers of other brands, like Lindt and Toblerone. Besides, they had very good locations,” Elias recalls. “We had good chocolate, they had great retail concepts, and by putting the two together, we made the switch to a proper consumer brand.”

That’s quite young for such a well-known brand, especially considering that Läderach only went global in the last five or six years. Today, they have a presence in Germany, the UK, the US, the UAE, Austria, Singapore, China and now India.

The FrischSchoggi

The FrischSchoggi

And while India has plenty of consumers who can spend good money on premium chocolates (a Rakhi hamper at Läderach costs Rs21,500)—evident in the location of this store, a swish mall that houses some of the world’s most luxurious brands—one can’t help but wonder: in a country where the chocolate culture leaves much to be desired, where mithai rules from street corners to festive gifting, how will Läderach work?

Both Elias and Rajiv Kumar, Vice Chairman of the DS Group that brought the brand to India, are confident of its success. Kumar, whose family has been a Läderach fan for years, says the two parties had been in touch since before the pandemic but could take their plans forward only after things settled. While he acknowledges that India’s chocolate market is relatively small, he’s optimistic that it underlines room for growth.

“In India, the per capita consumption of chocolate is 140g, compared to 8-10kg in European markets,” he shares. Moreover, the popularity and reach of local artisanal brands such as Mason & C.o and Paul & Mike are also growing at present, but their market, of course, is different from Läderach’s. And as Kumar points out, festive gifting in India is an enormous opportunity, given that “we have so many festivals and our weddings are also big affairs with multiple functions.”

Store interiors

Store interiors

However, the primary reason both Kumar and Elias are betting big on India is consumers’ growing awareness of and exposure to the world’s best brands in the luxury lifestyle segment. Audiences are starting to care about the freshness of their chocolate, which, as Elias points out, is not the norm. “People connect freshness with vegetables, fruits or salads, not chocolates. It’s not learned, but it’s our big secret to great quality. Fresh chocolate that’s not too old, that doesn’t have a months-long shelf life, is much better to eat and much more unique and flavourful. And that’s what sets Läderach apart,” Elias emphasises.

“There aren’t many chocolatiers who have the whole supply chain in their hands. We do everything in-house, from sourcing beans to producing the chocolate and other products, and we have all retail processes in our control. And that’s why we can be very quick and dynamic. From producing the chocolate to creating the Easter Bunny or FrischSchoggi, it takes just one to three days. Then we fly it out, or ship it to different locations.”

He’s not wrong, I agree, as I bite into a cappuccino tartufi that tastes so fresh and strong that I’m seeing Oompa Loompas. Still in my Charlie-like excitement, I have to ask: what was it like growing up in a family that runs its own chocolate business? “You know, we really grew up on top of the chocolate factory!” Elias laughs. “But as a kid, you don’t realise how special it really is. If my mother needed butter for cooking, she sent us downstairs. And we were allowed to pick three pralines when we went to fetch something for her, from the big tray where it lay after production. So we definitely had enough chocolate, but there were rules, of course!”

Later, as I nibble on a tart, fruity FrischSchoggi, I think again of Mrs Gump. You never know what you’re going to get, but at Läderach, you know it will be good.

Golden triangle was helpful for us to visit three different destinations in three states of India with cultural differences. It was my honeymoon trip & we booked it from Antilog vacations. We enjoyed rickshaw ride in Delhi & visited Chandni Chowk, Red fort, Jama Masjid & Qutub Minar. Taj Mahal visit was a wonderful Honeymoon gift for both of us, we spent half of our day at Taj Mahal. We were surprised by flower decoration & Honeymoon cake with royal treatment at Jaipur.

Kul bhushan Sharma Posted on: 31 Mar 2013

We organized a family trip for a week; it was a tour of Delhi Agra & Jaipur. This was a leisure trip for the elders but at the same time educational trip for the Children. At Delhi we visited Qutub Minar, Lotus Temple, India Gate, Red fort & Akshardham Temple. Then we went to Agra there we visited Agra fort & Taj Mahal. On the way to Jaipur we also visited Fatehpur Sikari. Our last two days of the tour were in Jaipur, there we visited hawa mahal. Pink city, Jal Mahal & Amer fort. This tour was the result of Antilog Vacations tour planning. Thanks to Antilog for such a wonderful trip.

From Kahwa to Guntur Chillies, 6 Indian Artisanal Chocolatiers Whose Eclectic Blends Are Insane!

This World Chocolate Day, here's a list of artisanal chocolate makers based in India whose concoctions will leave your mind boggled and your tongues salivating.

From Kahwa to Guntur Chillies, 6 Indian Artisanal Chocolatiers Whose Eclectic Blends Are Insane!

O ne thing that brings the entire diverse world towards a common consensus is chocolate.

A love story that begins from childhood and lasts forever, chocolate is rightfully known as the food of the gods. Often, the go-to de-stress ‘food’ for people from all walks of life, one can never explain or get over the obsession of chocolates.

Chocolate is love.

Over the years, people have experimented with flavours and given chocolates a gourmet avatar. More commonly known as artisanal chocolates, chocolatiers are getting unbelievably creative and experimental with their infusions.

This World Chocolate Day, we bring you a selection of artisanal chocolatiers based in India whose concoctions will leave your minds boggled and your tongues salivating.

1. Earth Loaf

Based in Mysore, Earth Loaf was started in 2010 as a craft foods project dedicated to uniting people and nature through a blending pot of nutrition and gourmet, well-crafted foods.

chocolate factory tour in india

One of the first chocolate-makers in the world to use organically certified Indian cacao beans exclusively and one of the first bean-to-bar chocolate-makers in the country, Earth Loaf offers a range of the exquisite combinations in their variety of artisanal chocolates.

Jackfruit & black pepper, mango, red capsicum & chilli, coconut, ginger & gondhoraj, tokai coffee & pineapple — these are some of the never-before-heard flavour blends by Earth Loaf.

Apart from chocolate bars, they also blend a range of cacao-infused teas and sell organic food commodities grown in India.

Bean Therapy

Fiery teja chillies from Guntur, sticky brittle chikki from Lonavala, nutty and green tea flavours of the Kashmiri kahwa tea, watapi coffee beans grown in Karnataka and Himalayan pink salt.

Offerings of a Mumbai-based chef and chocolatier Sanjoy Solomon under the label Bean Therapy, these are artisanal bars with eclectic Indian ingredients infused with Belgian Callebaut chocolate that yell out exotica.

chocolate factory tour in india

Think of it, Guntur chillies that are enough to fire up your entire existence, infused with chocolate?

Or the all-time favourite nutty chikki?

chocolate factory tour in india

Who would have even thought of that?

Mason & Co.

Based in Pondicherry, a French husband-wife duo Fabien and Jane Mason, operate their chocolate label Mason & Co straight out of Auroville.

chocolate factory tour in india

Another bean-to-bar chocolatier that directly works with organic certified farms in Tamil Nadu and Karnataka, their offerings include gourmet flavours ranging from chilli & cinnamon, rosemary & sea salt, peppermint, peanut butter, roasted sesame seeds to espresso.

chocolate factory tour in india

Apart from the miscellaneous assortment of flavours packed in a chocolate bar, they also have chocolate-infused herbal teas and organic cacao powders.

Smitten Bakery & Patisserie

Initially ventured as a baking business, Smitten Bakery & Patisserie by Mandakini Gupta, former television journalist-turned-home baker, offers an array of interesting additives like fruits, nuts, spices, coffee and even seeds amidst her handmade chocolate bars.

chocolate factory tour in india

With Belgian Callebaut and the French Cacao Barry, the chocolates have unusual flavour pairings like pistachio and raspberries, almond, currant and sea salt, hazelnut, fig and orange, pumpkin seed and candied chilli, peanut caramel crunch and roasted coffee bean.

chocolate factory tour in india

Much of the components in Mandakini’s chocolates are locally produced.

While the citrus component in the hazelnut, fig and orange chocolates head straight from her parents’ farm, the roasted coffee-infused ones use beans from Blue Tokai.

A common passion in chocolate is what led Kuhu Kochar and Tejasvi Chandela to start All Things in 2015.

chocolate factory tour in india

Each of their artisanal creation is a personification of their philosophy — celebration of the simple joys of life, be it travel, childhood memories, favourite season or even music.

Insisting upon personally handpicked ingredients that are fused into exotic combinations, each bar has its own story to tell.

chocolate factory tour in india

Like the self-explanatory Summer bar with Belgian white chocolate and a centre of Alphonso mango compote or the Jaipur bar that is appropriately wrapped in pink paper and has a rich combination of whiskey and dark chocolate.

Chockriti, an amalgamation of words Choc (short for Chocolate) and Kriti, Sanskrit for ‘ work of art’, was found in 2013 by Pragati Sawhney and crafts gourmet chocolates.

chocolate factory tour in india

Not taming inspiration to be homebound, Chockriti’s artisanal creations have flavours from far-flung countries like France, England, Japan, and Arabia.

chocolate factory tour in india

The eclectic flavours range from earl grey, kaffir lime, jasmine green tea, masala chai, salted caramel, mango chat, saffron pista, lemongrass, and even pumpkin cranberry spice.

Industry visit – A blissful trip to Chocolate Factory

“Chocolate is not just a word, it’s an EMOTION!”

Well there would hardly be anyone in the world who doesn’t love chocolate. The plant visit to Bliss Chocolate Factory in Bangalore marked another industrial tour of the MBA 2016-18 batch of ISBR on 26 April 2017. It started with the screening of a virtual tour of a standard Bliss’s production plant and an overview of the product line.

To talk of Bliss Chocolates Pvt. Ltd, it is a self funded private limited company with its production and retail operations in Bangalore.  Its two divisions – Retail and Corporate have managed to stir the chocolate cravings of the consumers. Bliss was created with an attempt to break out of the norms and monotony of the Indian chocolate market and re- energize the sweet tooth of the customers. Bliss chocolate concept arrived from the group of Non Resident Indians (NRIs) from Australia. They felt there was no chocolate lounge concept in India. Passion for chocolates led them to open an outlet in India. There were many reasons to choose Bangalore, like existence of corporate companies, lower set up cost and network in Bangalore was familiar compared to other cities for the NRIs. In the retail segment, Bliss Chocolate and Dessert Lounge are designed as premium category to offer a variety of hand crafted chocolate, chocolate beverages, cakes, desserts and chocolate meals.

The students were excited to experience how an industry dealing chocolates work at ground level. Mr. Priyanshu, Production Head of Bliss chocolate factory took charge of the entire visit of the students. He gave students a virtual tour of the entire plant which revealed about their range of various products except chocolates. Bliss deals in chocolates, breads, muffins, cakes, etc. The virtual tour was followed by an actual tour of the production plant starting with breads. The representatives were kind enough to personally take the students through the production process step by step. The students gained insights on how testing of raw materials takes place before entering the production process. It was followed by an explanation of the working and importance of individual units of the automated system. It included the mixing of raw materials to form a mixture that is then further molded into the requisite shape and size. Once the molding is done, it is baked and undergoes a cooling treatment to catalyze the process. Finally, the students were lead through the packaging unit of the plant where all the items were being packed in a variety of packages. Then the students were taken through the production processes of the cakes, muffins and everything was explained to them starting from the raw materials procurement till the final packaging. For all their production, it was pretty much the same process that they carried out irrespective of the exact type probably because they deal with the same product line. After this, the students were taken through the process of their chocolate production where they were guide by Ms. Vidhi Sahgal who happens to be their trainee and she explained to the students about the unknown sides of ‘being chocolate’ and briefed about the various types of chocolates. The basic and probably the most important takeaway of the entire tour was to understand that ‘ all that glitters is not gold ’ and thus ‘ all that looks like chocolate ain’t chocolate ’.

At the end of the tour the students took a group photo with the employees of Bliss Chocolates. With a heart filled with happiness and the pockets filled with chocolates, students left the factory with a different experience altogether which will remain with them for a long time.

BEAN to BAR | Crafted in Small Batches

Dark chocolate artistry starts with the bean. Pascati is among only a handful of chocolate makers that controls every step of this art of chocolate making.

Batch after batch of the finest cacao beans sourced from select plantations in Kerala make the unhurried journey from bean to bar  or bon bon. We roast, crack, winnow, conch and temper in a carefully controlled environment to achieve flavours of complexity and finesse that make Pascati indulgence worthy.

In our endeavour to use the finest quality ingredients and commitment to sustainable sourcing, we became India's first Certified Organic & Fairtrade chocolate maker.

Product Range

Inclusion & single origin bars, festive gift hampers, cacao powder, bulk cacao products, book a tour of our factory.

Inquisitive to learn more about the craft? Book your experience on AirBnb to see the process yourself. The experience involves a little bit of theory covering the history and process of cacao beans to chocolate. It will be followed by a sampling of a few bars and ended with a tour of the factory.

..beans sourced directly in their country and inclusions made with fresh and exotic ingredients..

If you were waiting for better chocolate made in India, you got served. The bean-to-bar mania in this South Asian country is exploding and is creating fierce competitors that aren't afraid to show what they've got. With beans sourced directly in their country and inclusions made with fresh and exotic ingredients, Indian chocolate is set to be a big player in the fine chocolate industry in 2019. One of those raising brands will definitely be @pascatichocolat. Showcasing for the first time at the @nwchocolate in Seattle in November 2019, positive feedback about this chocolate was floating all around the room.

While this chocolate is vegan, it is also organic.

Our favourite chocolate to have in Mumbai is @pascatichocolat . While this chocolate is vegan, it is also organic — which, for us is a huge plus. The rose and almond is a super special blend and our personal favourite, but to be honest they’re all delicious.

From sourcing to tempering, there is A LOT going on behind his bars!

Craft chocolate isn't the easiest subject to explain. Our exhibitors have their fair share of teaching to do to make sure our attendees understand the work behind every chocolate bar (and the consequent price tags). This is why we are in love with this shot that captures @pascatichocolat's founder Devansh Ashar explaining his bean-to-bar operations in India. From sourcing to tempering, there is A LOT going on behind his bars!

The fruity raspberry , crunchy and tart hibiscus in the delicate sweetness of 60% cacao are fascinating combination

I’m enjoying this 60% inclusion raspberry & hibiscus dark chocolate from @pascatichocolat ( India ). This bar has sweet floral and fruity aroma, brittle snap. The fruity raspberry , crunchy and tart hibiscus in the delicate sweetness of 60% cacao are fascinating combination.

A piece of this bar melting in your mouth...

This bar (Paan) from is from @pascatichocolat , one absolutely fantastic indian bean to bar maker uses 72% cacao and natural paan flavorings. A piece of this bar melting in your mouth is THE way to wrap up a heavy Indian meal.

A friend recently said that living in Southeast Asia was akin to winning one of Willy Wonka's golden tickets. And it's impossible to dismiss a long list of advantages that include the cuisine, cultural heritage, diverse landscapes, low cost of living, and generally friendly, laid-back hosts.

There are trade-offs, including terrible air quality, horrendous traffic congestion, and temperatures that veer toward the inhumane. But on the plus side, I get sun-kissed winters, palm-fringed beaches, and a less stringently regulated existence.

Like anywhere, life in Bangkok has its difficulties. The city is enervating, largely incomprehensible, and as batty as Mr Wonka. Yet, overall, I do feel like I was handed the keys to the proverbial chocolate factory.

With its gilded temples, sci-fi-worthy skyline, and heady mélange of sights, sounds, and smells, Bangkok could barely be more vivid. This intensity helped me fall for Thailand's lovably deranged capital when I first traveled here 14 years ago.

Here are four other things that have kept me in Southeast Asia's occasionally grubby grasp.

1. Food is one of the city's chief keepers.

From pavement vendors serving up banquets for just a few dollars to bustling markets packed with produce and vibrant with color, the city has a knack for whetting appetites, including my own.

Bangkok is often cited as the planet's street food capital . For high-quality street food in a safe, clean environment, it's hard to beat Or Tor Kor Market. It's a great place to sample a wide range of tasty creations, from som tam (spicy green papaya salad) and kao ka moo (braised pork served with rice) to mango sticky rice. Another choice destination is Yaowarat Road in Chinatown where delicious noodle dishes and roast meats such as pork, duck, and goose are the order of the day.

The diversity of options still floors me. On a recent Sunday, I started my day with a bowl of Chinese-Thai jok (rice porridge) from Jok Prince, where charcoal fire imparts added smokiness. I then had lunch at South Indian stalwart Tamil Nadu and finished the day off with a dinner at Ojo, the sky-high signature Mexican restaurant at the crown of the MahaNakhon Tower, Thailand's tallest building.

2. It's easier to tune out of the news cycle

This one is such an exile privilege that it comes with caveats.

Many Thai friends despair about the country's broken politics and surface-level media which favors soap opera-style stories over critical analysis.

But personally, I find it liberating to detach from the yoke of everyday consumption of Western news outlets through choice or osmosis.

Related stories

The pandemic was a giant story in Thailand, as it was everywhere. Yet Western media obsessions — US presidential elections and divisive identity politics, to name but two — are not given the same relentless prominence here.

Social media makes it difficult to ignore the vicissitudes of the global news agenda. However, I appreciate the added scope to tune out the noise.

3. The amazing destinations on my doorstep

I've experienced some transcendent moments across the Asia-Pacific region.

My travel writing gigs have encompassed dancing to obscure soul music in a sweaty underground club with Kansai's mod contingent, piloting a vintage Royal Enfield to hunt down the best bowl of khao soi in Chiang Mai , and hacking my way along the Nullarbor Links from South to Western Australia.

Recently, I visited Phong Nha in north-central Vietnam for the first time and spent three days exploring the karst scenery. A motorbike loop from the Phong Nha Farmstay was a worthy introduction to the area. But the grand finale — a one-day trek involving waterfall jumps and a swim into the extremities of a river cave — was unforgettable.

The cliché about there always being something new to discover is well-worn. And, in the case of Asia, it's true.

4. Life at home gets harder to visualize

I'd be lying if I said I never feel the call of home.

When I left London for Asia at the end of 2010, I felt pretty done with the UK due to a combination of factors, ranging from relationship woes to despair about my spluttering career.

For a while, I was happy enough to redeem the return portion of my airfare whenever I made my yearly trip home.

The arrival of my son, Alexander, along with a nearly three-year pandemic-imposed gap between trips, and a long-term Bangkok resident's gratitude for clean air and quiet have helped soften my perspective. These days, the annual pilgrimage to Scotland is something to anticipate rather than to tick off.

For all my renewed appreciation of my homeland, relocating there still feels like a stretch. I've not lived in Scotland since 2007, and the axis of my life — wife and son, friends, work networks, clients — is almost entirely Asia-orientated. Also, years of encountering diverse cultures, ways of life, and perspectives in Asia have altered me to the point where I'm not confident of readjusting to home .

We are heading back to Scotland this July, and I can't wait to catch up with friends and family and show my son Alex the Highlands for the first time. But post-trip, I'll resist the temptation to place rose-tinted spectacles on overly misty eyes.
