HACIENDA ZORITA WINE HOTEL

Only 10 minutes from the historic city of Salamanca surrounded by countryside and vineyards. This ancient Dominican monastery, located on the river Tormes, is now a unique Wine – Hotel & Spa, with its’ history stretching back to 1366. It was at Zorita that Cristopher Columbus persuaded the “Reyes Católicos” to provide the support he needed to realize his dream, leading to the discovery of the New World. BEST CHEESE & BEST HAM

A Zorita team member will lead us through a picturesque day in a landscape adorned with lush evergreen oak trees, olive groves, and vineyards. SALAMANCA BY NIGHT

Salamanca’s cathedrals and churches rise up suddenly on the other side of the Tormes River, The old city remains much as it was in the 18th century and nothing seems to alter the rhythm of this ancient  ville . The city’s pride is the University of Salamanca founded in 1218, it is said to be the third oldest university in Europe after Oxford and Bologna.

The central Plaza Mayor is perhaps Spain’s most glorious square, and throughout the city you’ll see exceptional Plateresque carving thanks to the soft sandstone. Enjoying Salamanca at night is a lifetime experience.

BODEGA EL CAPRICHO

Probably the best beef in the world . Proclaiming the culinary superiority of beef that isn’t raised agribusiness-style and shipped halfway around the world. But within that mind-set is a range of philosophies about what to feed the animals, when to slaughter them, how to age the meat, how to cook it. Selecting the animals can go beyond breed to — yes — personality. This is a chance to meet José Gordon, a breeder and chef in Spain devoted to offer the best meat.

After lunch, transfer back to Astorga to relax or stroll around on your own across this charming town, you won’t miss the imposing Episcopal Palace of Astorga as it is one of only three works completed by Gaudí outside of Catalonia, along with Casa Botines in León and “El Capricho” in Comillas. Anyway, tonight you will feel Astorga in full and literally “eat the city” by delving into the stories of the best restaurateurs in town in a dynamic show-cooking dinner.

LAS MÉDULAS ROMAN GOLD MINES

Las Médulas is an historic mining site in the region of El Bierzo which used to be the most important gold mine and largest open pit gold mine in the entire Roman Empire. The survey and excavations of pre-Roman and Roman settlements throughout the area allowed for new historical interpretations that greatly enriched the study of Roman mining. A positive result of these systematic studies was the inclusion of Las Médulas as a World Heritage Site in 1997. The view from  Mirador de Orellán  is truly breathtaking and definitely a highlight.

EL BIERZO, THE SPANISH BURGUNDY

Let's go to the heart of “the Spanish Burgundy”: Bierzo. The reds from mencía have that Atlantic fresh character sought after by world wine personalities and the wines from DO Bierzo are ranked among the 100 top wines in the world in the last times. Take the opportunity to visit a family run business and among century old vineyards that speak for themselves.

We continue our way to Burgos, and you’ll leave the rustic side behind you to enjoy  afine lunch showcasing contemporary cuisine with clearly defined traditional roots.

WINE TASTING

Relax today at Hotel Landa, situated in a painstakingly restored mansion and Medieval tower, and before dinner enjoy the best Ribera del Duero wine tasting session ever, it’ll be fun and instructive. The delicious home made Castilian cuisine at the hotel deserves being enjoyed in calm, it’s freshly-made bread and pastries are superb.

Burgos evokes medieval knights and princesses, such as El Cid,  old stoned streets, green avenues, statues, everything has Cidian. The spiers of the Cathedral – declared World Heritage – stand out over the forest of Gothic church towers. The mansions and houses emblazoned like the one of the Cord, Castilfalé or the House of Miranda remind palace intrigues and times of plenty.

This is a once in a lifetime visit; accessing one of the finest wineries in the world is an experience attainable by a very few. Grapes apparently were cultivated and wines made in the Ribera del Duero by the Romans, but modern plantings date from the Middle Ages when French monks brought vine cuttings to the Cistercian monastery at Valbuena de Duero.

Then he moved to Washington DC with José Andrés at ThinkFoodGroup (it was here where he met Katie Button), and he worked as Director of Service and helped with developing and opening new restaurants, including The Bazaar by José Andrés in SLS Hotels across Beverly Hills, CA, Las Vegas, South Beach, Miami, and Puerto Rico. Co-partner at CÚRATE , Felix’s close relationships with Spain, coupled with a sense of adventure and desire to share that with others, has helped him build a unique travel experience through Cúrate Trips.

Getting there.

Adolfo Suarez Madrid-Barajas is the main airport of Madrid, which is just 20 minutes or so from the city center or el centro . With 4 different terminals, it comes with quite a bit of shopping and other facilities. You can easily score a flight directly to Madrid from the vast majority of airports around the US as most of the major airlines serve this route.

The main carriers are Iberia , American Airlines, and Delta Airlines. In fact, if you’re flying from NYC or O’Hare in Chicago, you can expect direct flights in the off-season to cost you around 500 bucks!

Getting Around

The metro fares depend on which neighborhood you’re in, however, they’ll pretty consistently range from 1.50 to 2 euros (approx. $1.75 to $2.30). If you plan on using it frequently throughout your visit, you can also opt for a Tourist Card. These are either 1-day, 2, 3, 4, 5, or 7-day quantities. We did the math, and they almost always are more budget-friendly. Just remember that it is open from 6am to 1:30am.

Bus – Available from 6am to 11:30pm, Monday through Friday, and 7am to 11pm on the weekends, the bus also covers a good amount of the city. However, there are also night buses that start at 11:30pm and take over into the late hours! This is perfect if you want to catch a rave, a late-night drink and dinner, or simply want to see the city from a different view.

Taxi – Taxis are always an option, and hailing them off the street is pretty simple. Throughout various tourist destinations, you’ll also often see them lining up just waiting for customers. Remember, that the ones who have lit up green lights on the roofs are those that are available. Try to ride only with the city’s official cabs, which are white with a red diagonal stripe on the sides, along with Madrid’s emblem.

Alternatively, you can use a ride-sharing app. Uber does operate in the city, so this is an option.

Tip: Always make sure that the taximeter is on as soon as your trip starts! Some drivers will keep it off to try and scam some extra cash from you. If your driver doesn’t speak English, you can ask them to turn it on like this: “Disculpe, se puede prender el meter, por favor?”.

Where to Stay

Madrid consists of many different neighborhoods, with quite a few being very attractive for tourists. No matter what your budget is, you’ll realistically find somewhere that works for you.

  • For the luxe and plush, opt for Salamanca . In fact, the neighborhood’s Calle de Serrano is often compared to New York City’s Upper East Side, and referred to as “The Golden Mile”.
  • If you’re on a budget, head to Lavapies or Chueca . Both areas are very affordable, and are easy to navigate by foot.
  • If you’re traveling with children/the entire family, check out Barrio de Las Letras , or Sol-Gran Via . Sol-Gran Via is the area located between Puerta del Sol and Gran Via. This is the center of Madrid’s “cultural spots”. It features all kinds of theaters, boutiques, along with many very important buildings and unique architecture.
  • If you’re planning on going out to bars, clubs, and other nightlife scenes, check out Chueca , or La Latina . Chueca is a lively area full of people from all walks of life, all ages, and interests. The cafes and masterly-crafted cocktails here are incredible. La Latina is also very high-energy, and you’ll find many little markets, tapas bars, and “block parties”.
  • If you’re top priority in Madrid is to try the most delicious food possible, you can stay anywhere in El Centro . This is actually one of the safest, most pedestrian-friendly neighborhoods in the city. Not to mention, the elaborate architecture, palaces, etc. are some of the most impressive in the entire country.

As you can imagine, Madrid has some of the best food in the world. Let’s go ahead and look at some of the city’s top restaurants and eateries.

Saddle – Saddle is absolutely an artistic experience. It’s high-class, very elegant, yet intimate rather than stuffy. By combining modern-day with classic techniques, you’ll find this place to be refined yet varied. All on one floor, you’ll find private rooms and an expansive dining room with beautiful views.

Cruz Blanca de Vallecas – Consistently award-winning, Cruz Blanca de Vallecas offers Spanish food, placing tradition at the forefront of the operation. With international standards, this restaurant es made to make you feel like you’re coming home. Just make sure you book far in advance, as it can be booked up to 3 months at times!

Casa Benigna – If you go to Spain, you have to try paella. It’s just an unspoken rule. For excellent paella, make sure you head to Casa Benigna . The rice-based dish features arroz negro, squid ink, beans, meat, and more.

El Cisne Azul – Located in Chueca, El Cisne Azul is known for their wild mushrooms, with dishes that incorporate them like grilled boletus with foie gras and mushroom carpaccio. If you’re not a fan of mushrooms, you’re in the clear, as they also offer grilled meats and other dishes.

El Meson del Boqueron – El Meson del Boqueron offers basically the best callos a la madrileña we’ve had. With tripe, morcilla, and chorizo, it’s definitely packed with flavor and is perfect for any kind of weather. The restaurant itself is very captivating, with a kind of gothic flair that makes it look like it’s been around for hundreds of years.

Nightlife and Entertainment

Nightlife in Madrid is booming, and you can find everything from a flamenco club to massive electronic music raves.

Fabrik – If you’re looking for said rave, head to Fabrik. This two-floor club has a whopping 7,000-person capacity and a beautiful sound system to accommodate their world-famous DJs. Kapital is located in El Centro, and is legendary throughout all of Europe. The enormous club features 7 floors – each with a different theme. Goya Social Club is a nice alternative if you aren’t ready for 7 floors of partying. It has a capacity of just 200 people, though the more intimate environment is perfect for its house, deep house, tech house, and sometimes techno artists.

Get out of your comfort zone and into a tablao , or flamenco bar. Here, you can see or even participate in dancing flamenco while enjoying some delicious eats and fine drinks. Corral de la Moreria is our top pick, and is one of the oldest tablaos around. Torres Bermejas is another hot choice, with their traditional cuisine and famous flamenco.

For innovative cocktails, look no further than Salmon Guru . It has an interesting name, but even more interesting drinks. The neon décor is very flashy and fun for taking photos. Diego Cabrera owns this one along with Viva Madrid : another one of our favorites. Viva Madrid has an almost opposite take on Salmon Guru, being a historic tavern with classic cocktails. Varsovia Cocktail & Bar is charming, and one of the top picks for a good vermouth and tapas.

No matter where you go in Madrid, you’ll likely be able to find many pretty, outdoor bars and cafes, karaoke bars, and live music.

While many people may think that Madrid is constantly warm, this is not the case at all. Their summers are typically pretty short, hot (around 99 degrees Fahrenheit), and dry. This is great if you aren’t a fan of humidity. However, the wintertime can get very cold and cloudy, dipping down to 23 degrees Fahrenheit at times! Try visiting from late June to late August for the best weather – just remember that most other European countries also have vacation from school at this time and things can get crowded.

Attractions

If you enjoy Mother Nature and serene little getaways, you’ll love Buen Retiro Park and the Crystal Palace. El Parque del Retiro is filled with lush flora, and is preened and maintained wonderfully. Covering over 140 hectares, it will originally made for the Count Duke of Olivares back in the 17 th century! El Palacio de Cristal consists of cast iron and glass, and sits in front of a flowing fountain and reflecting pool. Parques and fountains are plentiful in Madrid however, so you can really take your pick.

Aside from the Prado Museum , Madrid has many other architectural stunners like the Royal Palace and Gardens. Drawing many similarities to Paris Versailles, this palace is still used as the official residence of the king of Spain. Here, you can also catch some artwork by Velazquez, Goya, El Greco, and the rest of the crew. However, all kinds of palaces and interesting architecture covers Madrid.

If you’re a history buff, you have to head over to Puerta del Sol, which is where the old city gate stood. It’s been the center of many important events throughout history, such as the Spanish resistance to Napoleon back in the early 1800’s, and in 1931 when the Second Republic was proclaimed! Today, it has all kinds of fun shops and trendy cafes. If you like wine then be sure to do a wine tasting tour while you are in Madrid .

Once you arrive to your destination, try and walk as much as you can (within reason). Obviously, this is counting on your area being safe to walk around, which all of the neighborhoods we’ve mentioned are. This is the best way to get a feel for the city, and you can see everything up close. Plus, if you ever get tired, Madrid has an excellent public transportation system to help you out.

Try to at least learn Spanish basics. There are tons of great channels on YouTube, and Duolingo is a handy little app to have. If you practice just a few weeks before you go, you should at least be able to speak what’s required.

Make sure to check the restaurants’ meal times, as Spanish meal times are quite a bit different from ours. Lunch usually starts around 2pm, and dinner is served around 9, which is pretty late by most of our standards.

Due to the market’s proximity to Plaza Mayor (basically right next to it), the market is quite overpriced and very overcrowded.

You could spend a fortune during an afternoon at San Miguel (on iberian ham alone – which costs around €18 for a small tray).

My advice? If it’s your first time in Madrid, go to San Miguel, buy one drink, take in the atmosphere and the impressive cast-iron architecture, and then leave for Antón Martín Market instead.

El Mercado de Antón Martín is a much more authentic food market, with the same gourmet food stalls and tapas, only prices are reasonable.

Found in the Lavapiés neighbourhood , it’s just a short walk from the city centre yet it feels so much more local.

Don’t miss Garage Bar for refined Spanish gastronomic dishes and natural wine, Casa Jaguar for authentic Mexican and El Mono de la Pila for Peruvian ceviche.

For quick eats, choose La Yapa’s homemade empanadas or La Panadería de Elietta for cakes and pastries.

These tapas tours are well reviewed but quite pricey.

The thing is, you can actually do your own self-guided tapas tour in Madrid , which will be way cheaper and more authentic.

To do a self-guided tapas tour in Madrid, all you need to do is walk to Madrid’s Tapas Street .

Madrid’s famous ‘Tapas Street’ is called Calle de la Cava Baja , and it’s where you need to go for the most epic tapas in the city.

Calle Cava Baja is located in La Latina neighbourhood, the best area for tapas in Madrid and one of the best barrios to stay in .

The narrow cobbled street, lined with taverns and tapas bars, is just a few minutes’ walk from Plaza Mayor in the centre.

Locals and tourists enjoy spending hours wandering up the street, popping in and out of bars for an ice cold caña and a couple of tapas dishes.

When choosing a restaurant to eat traditional Spanish food in Madrid, many guides will direct you to Sobrino de Botín.

Founded in 1725, Sobrino de Botín is the oldest restaurant in Madrid and the oldest restaurant in the world in continuous operation.

Unfortunately, whilst the 20th century writer Ernest Hemmingway may have raved about Botín in his novels, the quality of the food doesn’t seem to have withheld the test of time (and reviews these days are pretty average).

Instead, if you want to visit an authentic Spanish tavern in Madrid, I can recommend the highly rated Restaurante El Tormo .

Found tucked away on a side street near the Royal Basilica of Saint Francis, Restaurante El Tormo is a well respected veteran on the Madrid dining scene.

The family-run tavern focuses on Castilian dishes from the 16th century, along with regional wines.

My recommendation is to choose the degustation menu, which offers 5 or 6 different dishes from La Mancha region along with some coffee to finish.

From traditional stews to pisto with fried egg and the famous ‘las gachas’ (a delicious savoury porridge with garlic), expect to try food you won’t find in the other tapas bars around town.

The friendly waiters will explain the history of each dish when they serve it to you, and you’ll really feel like you’ve been welcomed into a family home in this restaurant.

For an authentic ‘Old Spain’ food experience in Madrid, you can’t beat Restaurante El Tormo.

6. Cocktails at a Secret Speakeasy Bar

Madrid is a city with brilliant cocktail bars.

But for the most unique and magical cocktail experience, you need to go to Bad Company 1920 .

Named one of the best 50 cocktail bars in the world, Bad Company needs to be on your Madrid bucket list.

Bad Company is found down a backstreet near Gran Vía , and you need to hunt down the secret password on Instagram to enter the big wooden door.

Once you’re in, you’ll leave Madrid entirely and be teleported to 1920s New York during the prohibition era.

You won’t find mojitos or margaritas on the menu at Bad Company, because all of the drinks are inspired by historical figures and events.

Complex and creative, forget everything you think you know about cocktails and instead embrace the eccentricity of Bad Company 1920 .

7. Buy Homemade Biscuits From Nuns Through a Secret Hatch

‘Palacio’ or ‘Los Austrias’ is Madrid’s most historical neighbourhood, where all of the city’s oldest buildings can be found.

It’s home to las Carboneras convent, an early 17th century convent where a female community of nuns still reside to this day.

But this convent is a little different, because it sells secret biscuits that can only be obtained by going on a little scavenger hunt.

The first part of the adventure is to find the big brown door to the convent, which is located on Calle del Codo.

Then, press the buzzer for the nuns (monjas) and wait for a voice to say ‘hola’ .

Next, reply with the password ‘dulces’ (you can say ‘cookies’ or ‘biscuits’ in English too) and the door will open.

Once inside, make your way through the courtyard until you see the Lazy Susan or turntable with a dulce menu at the side of it.

Now it’s time to choose which biscuits you would like to buy (the orange biscuits and almond ones are popular), before placing your money inside the turntable and stating your order.

Seconds later, the turntable will start moving and your money will be gone, soon to be replaced by your chosen biscuits once the rotation is complete.

On the other side of the bar, almost certainly will be Gonzalo Melendro, the grandson of the founder of this bar with tradition and panache in the center of the city. Almacén means “corner store,” and this spot really does feel like one, with a big counter up front and everything. But the historic 1920s-era exterior and cozy, candlelit barroom also make it elegant enough for a phenomenal date. This dark, jazzy, glamorous spot is up a dimly lit staircase in Palermo. Its name, which means “the women patriots,” pays homage to women in Argentine history, and the decor mixes old-fashioned touches like armchairs from the 1800s with floor-to-ceiling velvet curtains. Get dressed up and book a table for Tuesday or Wednesday, when there’s live jazz. The bottles of mostly organic and low-intervention wines are all displayed on the back wall, so instead of studying the menu, just grab whatever looks interesting and bring it back to your loveseat. Come here with friends when you want to feel trendy, drink great wine, and enjoy small plates like chard fritters and empanadas. They do have sidewalk seating, but for the full experience, you should really sit upstairs.

Lucrecia Vinos

Just over the border from trendy Palermo is Chacarita, a neighborhood that’s quieter but increasingly full of popular restaurants and bars. That’s where you’ll find Lucrecia, a creative hotspot with lively tasting events and activities like ceramics-and-wine workshops and embroidering-and-wine tasting nights. Gather a big group, reserve in advance, and pick a bottle or three from the huge list of funky, independent labels that you won’t find elsewhere, like Carinae wines, a boutique vineyard in Mendoza. We also love their twists on classic Argentine dishes, like fried oyster mushrooms or smoked eggplant with tomato relish and cashew cream.

Naranjo Bar

Naranjo is not the type of wine bar where you’ll wonder if you need some kind of advanced degree to order off the menu. With its kind waiters and laid back atmosphere, this spot has zero pretension—just relax and enjoy good wine and conversation over vegetarian tapas like carrot hummus or beet salad. The exposed-brick, high-ceilinged bar is perfect for hanging out with a bigger group and sharing a few bottles from small, independent Argentine producers.

Amores Tintos

From the outside, Amores Tintos looks like a loud, busy craft beer bar—but get closer and you’ll see the taps actually serve different varieties of wine. Bring some friends and sit at a wooden table on the sidewalk, and share plates of Malbec empanadas or a hearty milanesa. This is the kind of place where you go for “just one drink,” and hours later you're still laughing and ordering extra rounds. If you want to pore over an endless list of bottles from internationally renowned vineyards, this might not be the place for you. But if you’re looking for a heavy pour and a good time on a lively street corner, Amores Tintos is perfect.

Vico Wine Bar

Vico Wine Bar is great for a fun date night, since it turns wine tasting into a choose-your-own-adventure type of experience. When you arrive, you’ll get a special card that you can use to serve yourself from 100+ bottles in by-the-glass dispensers—it’s like having an unlimited pass at the wine amusement park. Friendly, knowledgeable sommeliers are always close by and ready to advise if you need a hand, and once you’ve made your choice, you can add some small plates or a cheese board to round out the night.

Helka Wine Bar

If getting a tarot card reading while sipping Malbec in an old mansion sounds like your idea of a good time, this is your spot. Helka calls itself a “wine and experience bar,” so on any given evening, you might find bingo, a wine and art event, or a visit from a medium. Seating-wise, Helka has several different patios and retro-chic living rooms to choose from—in fact, there’s so much going on that you might not quite know what to do with yourself. But you’ll certainly never be bored, or thirsty. We recommend booking a table for a big group and ordering a couple of bottles you won’t see at other bars, like the Doña Paula riesling, or the Costa y Pampa pinot gris. Pair your wine with an assortment of plates to share, like arancini, bruschetta, and a selection of empanadas.

Travel to Jerez, Porto, and Madeira: Where Wine And Whisky Meet

The most fun way to learn about whisky is to visit a distillery, particularly in a renowned place like Scotland or Kentucky. But whisky’s flavors also often take root in other parts of the world, notably the great wine regions that supply distillers with their casks. Fortified wines—wines to which a distilled spirit, usually brandy, has been added—in particular often play a starring role, with sherry being foremost, alongside port and madeira. All three offer their own distinctive flavors and have unique regions that are well worth exploring.

Plan a trip to Porto and the Douro Valley in northern Portugal, where the Douro River carves its way through rolling hills lined with terraced vineyards, making for a picturesque view that can be enjoyed from the river itself on scenic cruises, or from the winding roads above while driving through the region. The Douro Valley is such a beautiful spectacle that it’s been classified as a UNESCO World Heritage site.

The island of Madeira off Portugal’s southwestern coast would be a worthy destination even for those who might not indulge in its wine wares. Dramatic seaside cliffs and a range of topography await those with a penchant for hiking and strolls along its system of levadas (irrigation channels), charming old cities, and excellent cuisine. Or head to sunny southern Spain and the Andalucía region to visit Jerez, the home of sherry. The entire town seems to be shrouded in an invisible, perfumed cloud of sherry wine production thanks to its abundance of bodegas. It makes for a wholly unique and unforgettable sensory experience.

These destinations together are a seemingly small cross-section of the wine world that plays a major role in shaping many of the whiskies we enjoy. A visit to one or all three will elevate your knowledge and understanding, while also offering an unforgettable escape.

Porto and the Douro Valley

Portugal’s Douro Valley is the oldest regulated wine region in the world, officially dating to 1756. Many notable houses go back even further than that. For instance, Taylor’s Port (today part of The Fladgate Partnership, a venture including the Taylor Fladgate, Fonseca, Croft, and Krohn port houses, as well as several tourism initiatives under one roof ) was founded in 1692. The oldest remaining port house may be Kopke, founded in 1638. On the whole, Portugal has a greater share of its land covered by vineyards than any other country. Port wine is made from a blend of grapes, and many traditional practices are still followed, such as strict adherence to hand-picking and the annual foot stomping of the grapes during harvest season.

The main styles within port are ruby and tawny, and whisky drinkers will appreciate that the primary difference between them is their cask maturation. Ruby port can be aged in enormous wooden vats, or stainless steel tanks may be used to preserve its color and freshness, whereas tawny is aged in casks, and therefore tends to exhibit more wood and tannin characteristics.

The way these two styles are produced is also different. While ruby port itself is often young, the best ruby ports will be sold as vintage ports, with vintages released only in small percentages. Tawny port, meanwhile, is released predominantly with age statements.

Vintage port represents the pinnacle of the category. A tawny with an age statement is ready to drink upon bottling, whereas a vintage port may continue to improve and evolve in the bottle for years and decades to come. A colheita, meanwhile, is a vintage tawny, a rare sub-category and a mark of great quality as a result of its combination of cask aging and vintage selection.

GETTING THERE

Porto is a short one-hour flight from Lisbon, and its airport connects to other international locales as well, with flights from European gateways such as Paris, and even occasional flights from the U.S. From there, reaching the Douro Valley takes about an hour and a half by car.

WHERE TO STAY

The swanky The Yeatman Hotel offers a spectacular view of the city of Porto unfolding before it and is known for its high-end spa and outdoor pool. The property opened in 2010 and is another entity of The Fladgate Partnership, which helps ensure a deep selection of port is plentiful in its bars and restaurants.

WHAT TO DO, EAT, AND DRINK

At the Yeatman, visitors will be adjacent to the new World of Wine development, which encompasses numerous museums, restaurants, and galleries. Reserve a meal at 1828 or Mira Mira by Ricardo Costa, or, back at the hotel, dine at the Michelin-starred The Yeatman Gastronomic Restaurant. The Taylor Fladgate Cellars, where you can learn about the history of port production while touring a museum and one of its warehouses, are also located adjacent to the Yeatman, making it the ideal jumping-off point to explore Porto’s key attractions.

From here, take a drive down the Douro River and into the valley, where its terraced hillside vineyards compose a picturesque scene and there are scores of cellars and tasting rooms to explore. Stop at Quinta da Roeda, the home of Croft, located on more than a mile of Douro riverside with vines over 100 years old. It’s one of the most tourist-friendly destinations in the Douro. For a smaller, more boutique visit, stop at Quinta do Panascal.

The story of sherry production is one of turning a single grape variety, Palomino fino, into an array of stylistic variations. It accounts for 95% of production, though moscatel and Pedro Ximénez are used to make sherry’s sweetest renditions, and the richness of the latter’s casks in particular play a prominent role in whisky finishing.

The key in sherry production is whether it’s aged under a layer of yeast known as flor, in a process called biological aging. Fino sherry is dry, and aged under flor for a minimum of 2 years, while amontillado begins under flor until the yeast is killed off and then finishes its maturation in oxidative conditions. Oloroso is aged from the start with no flor. Palo Cortado was originally an accident of production, but is now made intentionally, and has a profile between that of oloroso and amontillado.

Regardless of the style, sherry makes use of solera maturation. A solera system uses multiple tiers of casks to refill one another, with younger wines added to older barrels without ever entirely emptying the oldest row. Sherry is made between three towns in a region referred to as the “sherry triangle”—Sanlúcar de Barrameda, El Puerto de Santa María, and its epicenter, Jerez de la Frontera. It’s a small swath of land, with a drive between Jerez and Sanlúcar taking just 30 minutes. Manzanilla sherry features the same production method as fino, but must be made in Sanlúcar de Barrameda.

Jerez is within easy access of Madrid, via a 75-minute flight or four-hour train. It’s also a short way from Seville, with an hour’s drive closing the gap between the two.

The 27-room Hotel Bodega Tio Pepe opened in the summer of 2020. The rooms look down upon the famed vineyard-covered alleyways of the González Byass bodegas on one side, and have a straight shot of the 17th-century Jerez de la Frontera Cathedral on the other.

The town of Jerez was built around the sherry industry, rather than vice versa, so its bodegas tend to be found among its quaint cobblestone streets, and the alluring aroma of maturing sherry wafts from one street to the next. González Byass, established in 1835, is the largest and most well-known producer and has the most robust set of visitor experiences.

Lustau is another large producer with a visitor center in the town of Jerez. Smaller bodegas should also be visited to get a true sense of the industry. Faustino González and Bodegas Cayetano del Pino y Cía are two recommended choices; be sure to contact either in advance to arrange for a private tour. Eating well is half the fun with a trip to Jerez. A few recommended choices to score a great meal include La Carboná, La Cruz Blanca, and Albores.

Madeira is known for its unique maturation process, involving the purposeful oxidation and heating of the wine in the barrel, the latter of which is performed either via an artificial process known as estufagem , or a natural and lengthier warehousing known as canteiro. Across styles, madeira’s signature flavors are the result of oxidation and heating. While estufagem is only used for younger wines made from the Tinta Negra grape, this is the bulk of madeira production. Higher quality madeira wines tend to be made with four grapes, each representative of a given style defined by its relative sweetness: Malvasia (or Malmsey) is sweet, Boal is medium sweet, Verdelho is medium dry, and Sercial is dry, though different producers showcase signature characteristics across each style. Madeira may be released as a vintage or with an age statement, and vintages are considered the premier offerings.

While part of Portuguese territory, the island of Madeira is in the Atlantic, about 600 miles southwest of Portugal. It’s accessible via a 90-minute flight from Lisbon.

Funchal is Madeira’s capital, and several madeira houses have visitor centers within the old quarter, making it the most convenient option for a stay. The historic Reid’s Palace Hotel offers luxury lodging at a private perch atop a dramatic clifftop, with walking access into town. The bar is well-stocked with vintage madeira, and the hotel’s swimming pools and ocean access make for idyllic places to relax after a day of tasting and touring.

Blandy’s, founded in 1811, is the largest producer of madeira, with a house style that is definitive to many drinkers. With a central visitor center and a number of tour options, it’s a logical start.

Also in Funchal is H.M. Borges, a producer established in 1877 and run by fourth-generation owner Helena Borges Fontes. “We all do madeira wine, but in a different way,” she says, with her house striving for balance. Another major producer worth visiting is Barbeito, located outside of town. Founded in 1946, its wines are said to display freshness and elegance.

For an indulgent dinner in Funchal, consider Audax, with a tasting menu of traditional Madeiran dishes served in avant-garde formats. A more casual outing focused on grilled fare and Mediterranean flavors can be found at Avista.

“We are so excited, we are so proud, and we think our struggle will be quieter now,” Casañas said with a chuckle as he acknowledged the journey to become the world’s top-ranked restaurant. And when asked if a younger generation of diners may not understand or appreciate long tasting menus with an avant-garde streak, Casañas replied, “Maybe it’s not the more fashionable way to do things, but for us, we do the things we want, and we never change our way. And today we are here.”

After Table by Bruno Verjus in Paris moved up from 10 last year to No. 3 in 2024, yet another Spanish restaurant, Diverxo in Madrid, joined a top five that was rounded out by Maido in Lima, Peru. At No. 6 Atomix in New York City once again ranked the highest of any American restaurant, further cementing its position at the forefront of Korean fine dining not just in the U.S. but around the world. The other U.S. restaurant to rank in the top 50 was Kyle and Katina Connaughton’s SingleThread in Healdsburg, Calif.
