Brewing craft beer since before it was cool.

We began our operation in 1994, within months of the passage of legislation allowing brewpub operation in the great state of Texas. We found a public eagerly awaiting the enjoyment of our cold, freshly brewed beers. Long before the craft beer craze we were cranking out delicious award winning brews. As the oldest operating brewpub in the state, you could call us the "granddaddy" of brewpubs in Texas. We are located on Main Street Fredericksburg, Texas. In our fair little town, sidewalk consumption is allowed; you can take our cold craft brews on a sidewalk stroll down Main, fill a growler to take home or sit down with us and enjoy a brew paired with lunch or dinner... whatever suits your fancy. Our Brewpub serves German fare, pizza, burgers, salads and everything in between.   The Brewery sits in a restored 1890s era building. In addition to its main room, the brewery has a large, air-conditioned biergarten. The second floor of the building provides "Bed & Brew" guest rooms, 12 rooms (one on ground level), each decorated in a different theme. We hope you'll join us soon.

Breweries And Distilleries

Fredericksburg, Texas – like most other German settlements in Texas – has always had a good relationship with beer. Almost as soon as the settlers finished building their homes, their churches, and schools, they seemed to ask “Who brought beer?” In most communities, the first brewers were hoteliers.

Texas Brewery History

Assign/Probst Brewery – Dr. Adolph Assig owned a house on the North bank of Town Creek. In March 1857, he borrowed $850 from Frank van der Stucken to buy equipment for a wheat beer brewery. Assig’s wheat beer had a reputation for its quality and purity. Members of visiting singing societies who often visited Fredericksburg drank the beer as fast as they could tap it. In 1860, Frederick Probst worked at the brewery as a cooper, making barrels for Assig’s beer. In 1861, Assign moved to Blanco, leaving the brewery to Probst, who moved the brewery to West Austin Street. Probst brewed through the Civil War, barely surviving. After the war things improved until the big breweries in San Antonio arrived in town. Probst beer cost a dime in Fredericksburg’s saloons, while ice-cold Lone Star, Pearl, Schlitz, and Budweiser all cost a nickel. Probst closed his brewery in 1895.

Mauer Brewery –  Henry and John Mauer opened a lager beer brewery in Fredericksburg in 1875, after brewing in Marlin, Texas, for a short time. In 1877, John Mauer was running the brewery on West Creek Street close to the Kuenemann Home. Henry left town, eventually working as a brewer in Seattle. John ran his brewery until 1884 when he presumably died. His wife was listed in the 1890 census as a widow living in El Paso. (Source: TexasBreweries.com )

Pedernales Brewing Company , 97 Hitchin Post Lane, was founded by Lee Hereford in 2012, who had the idea to brew classic beers. The company enjoyed statewide distribution for 5 and a half years, closing in late 2017.

The latest brewery in Gillespie County is Altstadt Brewery , 6120 E US Highway 290, which started in March 2017.  (You can purchase Altstadt beers at our office!)

Hill Country Distilleries

Dietz Distillery , 1434 S. U.S. Highway 87,  offers Five Judges Gin, a London-style Gin with a Texas twist – named in honor of the five judges who have called the property home during the past century.

Elk Store Winery and Distillery , 327 East Main Street, make brandy, moonshine, and gin.

Garrison Brothers , 1827 Hye Albert Rd., Hye, Texas, offers tours 10:00, 12:00, 2:00, or 4:00 Wednesday through Sunday.

Note: Saturday tours are $20.00 and require a reservation (available on their website). Other tours are $10.00/person.

Hye Rum , 11247 Hwy. 290 West, makes three different rums for cocktails.

Iron Goat Distillery , began distributing in the Summer of 2018. 817 Usener Road, Fredericksburg, Texas 78624. There is no tasting room, but the spirits are available in local bars and liquor stores.

1.  Altstadt Brewery

Altstadt Brewery is a German-style brewery with an excellent 120-acre production facility, old-world European architecture, and authentic German-style craft beers served up in a laid-back atmosphere. This brewery has been a staple of downtown Fredericksburg for decades and is the first Texas Hill country brewery. They are open for guests for a week, during which time they offer six unique beers on tap, award-winning freshly made ales, and German-style lagers brewed on-site. This brewery features its brewing equipment in full view and has a warm, welcoming, laid-back vibe—from its wooden interiors to its furniture.

In addition to its indoor and outdoor seating, they also offer plenty of rooms, which include Bed and Brew, with 12 available rooms onsite. This room offers everything an adult guest could have asked for. And if you plan to celebrate privately, they have the Biergarten to offer!

3.  Ogle Brewery  / Arch Ray Winery

Your Texas Hill County tour will not be complete without dropping by the newly opened brewery in Fredericksburg and part of the famous Arch Ray Resort. Ogle Brewery is the newest attraction for all beer enthusiasts. This brewery features a spacious industrial taproom with a long bar and plenty of indoor and outdoor seating.

This brewery offers six tasty beers on tap ranging from light and approachable Cream Ale and Mexican Lager to the darker style of American IPA, Red Ale, and Stout. Indeed, it is the perfect place for everyone who plans to hang out, do outdoor activities, and have a good time.

5 stars is not enough to express how much fun and gratitude we have for George, Kristi and Shane! We had a bachelorette party of 12 people. We wanted the flexibility to pick and choose wineries, as we needed a varietal mix of white, blush and red at each location, which did not disappoint! Upon booking George and Kristi were very communicative, offer so much knowledge on the area and recommendations to best fit your group (that also includes if you prefer breweries or distilleries over wineries, this was a route we looked into). Our day was a 6 hour, 11:30AM-5:30PM with pick up from our AirBNB close to Downtown. We hit Airis'Ele, Ab Astris and Untamed. A must add is to have lunch at Untamed, the pizza is out of this world! An added bonus is you have your own personal photographer for the day. George knows how to get those angles! Bottled water was available in the car, as well as you had control over the radio. George and Shane were very attentive to our group throughout the day and jumped right into the groove of our group, which we all know Bachelorettes can be a handful. Hands down, book Kirchman. Any future tours I will only use Kirchman or recommend!

What an amazing experience! Charlie took great care of our small group of 4! We were celebrating my daughter's 21st birthday and her college graduation. The absolute best part of a private driver/tour is the flexibility! We were able to spend as much or least amount of time at each spot! We were even able to add in a lunch stop that Charlie recommended and experienced an award wining pizza - so good!!! I cannot say enough positive things about Kirchman's Private Tours!!! We will use them again every time I am in Fredericksburg!

We had a wonderful experience with George. His suggestions for wineries were great, vehicle was spotless but most of all he was the kindest gentleman. We spent the day in Fredericksburg with Kirchman's Tours visiting several wineries. We were picked up on time in a white SUV stocked with water and plenty of room for the 6 of us. At each stop w we're dropped at the front like VIP and our driver even popped in to take pictures at each stop which were provided to us at the end of the day. During our ride we had friendly conversation and our choice of music. I would definitely recommend Kirchman's Private Tours and will be using them on our next trip in October!

What an amazing day! If you want a true and intimate wine tour in Fredericksburg, book with the Kirchmans! They are great with communication and planned everything for us. It was the perfect day for my family! Thank you to George for showing us such a wonderful time! We cannot wait to return and spend more time with you!

I chose Kirchman based on the reviews and we were all so impressed. Kristie planned our day based on what I wanted and George gave additional suggestions based on the weather. Kristie was our driver that day and was so sweet and kindly kept us on schedule. She took pictures all afternoon (even of the wineries while she was waiting) and sent them to me at the end. The SUV was nice, clean, and new. We will definitely be booking them again for our next wine tour!

Amazing! Kristie was the sweetest and knew how to make our day so fun! She helped our birthday girl plan our day and knew all the right spots. She took some great pics and at the end of the day when we went over our time she was super flexible and dropped us off to dinner. We were able to meet her husband at one of the wineries and he was just as nice as her and made sure we were all good. Amazing! And when we go back - we will use them again.

A bout an hour’s drive from both San Antonio and Austin , the city of Fredericksburg is a popular vacation spot for couples and families in the Texas Hill Country. And with its rich German heritage, growing wine industry, and lots of outdoor areas to explore, it’s easy to see why Fredericksburg has such cross appeal among different types of travelers.

Whether you’re eying it as a weekend getaway destination or a full-fledged family vacation spot , there are a number of ways to approach a visit to Fredericksburg . Here are two different approaches to getting the most out of your Texas Hill Country escape—one with the kids in tow and one for just the adults.

What to Do in Fredericksburg with Kids

Start at downtown’s  Pioneer Museum , where the whole family can explore a log cabin, one-room schoolhouse, and other historic structures that show just how different life was for the German settlers who established the city of Fredericksburg back in the 1840s.

Then, for more time-traveling excitement, head to the  National Museum of the Pacific War . This multi-venue site pays tribute to those who served in or supported World War II’s Pacific war effort along with hometown hero Admiral Chester Nimitz, who served as commander in chief of the U.S. Pacific Fleet and Pacific Ocean areas. A new interactive children’s exhibit helps young visitors understand what it was like to be an American kid during the war. Three different children guide visitors through their experiences, including a young girl of Japanese descent whose family was sent to an internment camp.

WINE COUNTRY VACATIONS: How to Plan the Perfect Wine Tasting Trip to Napa and Sonoma  

The Fredericksburg area wineries serve both familiar pours and less typical varieties that do well in the Texas climate, so you might find some unexpected new favorites.
