In addition to learning more about vinegar and how they could use it to improve their cooking and cleaning, guests enjoyed lunch, drinks and snacks, plus there was a live draw during which one lucky attendee won a luxury safari!
Together with Mbali, Safari Vinegar recognises the incredible versatility of vinegar, and have compiled a list of vinegar hacks that will not only make your life easier, but also improve your cooking and home cleaning. Why not try these tips at home?
Cooking hacks
- Instantly revive wilted leafy greens by tossing them in cold water and a little bit of Safari White Spirit Vinegar.
- Add delicious flavour and tenderise your meat by soaking it in a homemade vinegar marinade overnight. Add herbs and spices to your choice of Safari vinegar (we recommend Safari Brown Grape Vinegar), and simply let the meat soak in the mixture before cooking.
- Disinfect your fruit and veggies, dissolve wax and remove pesticide residue by washing them in a Safari White Spirit Vinegar solution. Remember to rinse them with warm water afterwards.
Cleaning hacks
- Remove stubborn grease from your microwave by mixing half a cup of Safari White Spirit Vinegar with the juice of half a lemon and warming the solution for 4 – 5 minutes. Then simply wipe the inside with a cloth – no scrubbing necessary!
- Worried about germs on your kitchen sponge? Soak your sponge in half a cup of Safari White Spirit Vinegar to kill bacteria and remove build-up.
- Bad smell coming from your dishwasher? Before your next wash cycle, add half a cup of bicarbonate of soda to the inside of the machine and place a cup filled halfway with Safari White Spirit Vinegar in the machine. Beauty and wellness hacks

BILTONG 101: HOW TO MAKE YOUR OWN BILTONG AT HOME
Have you ever flirted with the idea of making your own biltong? Well, it’s not such a crazy idea. We can show you the best South African biltong recipe, follow our step-by-step guide and you’ll be an expert in no time!
THINGS TO CONSIDER BEFORE YOU BEGIN
In South Africa, biltong was originally made from game meats like springbok and kudu. Today, beef is the most commonly used meat to make this popular salty snack.
The cut you use is up to you. Some people believe the better the cut, the better the biltong, but I beg to differ: I think topside or silverside work just as well as more expensive cuts, and at a fraction of the cost.
Using a cut with a lot of fat can be trickier to dry, so if you’re a novice, stick to leaner cuts until you get the hang of it. The only rule you really need to follow is to cut the meat into strips along the grain , not across it. If you like your biltong moist, be generous and cut the strips on the thick side. The thicker the strips, the longer they will take to dry.
One of the key biltong ingredients is salt. I believe in using quality salt – either pure sea salt or something like Himalayan pink salt. Not only is it better for your health, but it adds much deeper flavour, too.
Some folks swear by salting the meat first and then scraping off the excess before pickling the meat in the vinegar. I like to make a mix of the two – a kind of brine, if you will. I find it’s easier to control the saltiness this way, and you can then decide how long you want to leave the meat in the brine for, as this also affects the flavour of the end product.
The vinegar serves two purposes: firstly, it kills any harmful bacteria or mould that could be lurking on the surface of the meat (and which could potentially wreak havoc with your stash later on) and secondly, it adds flavour.
I like to use a mixture of red wine vinegar, Worcestershire sauce, a little bit of sugar (optional) and, sometimes, a tablespoon or two of spice. The next step is technically where the spices come in, but I sometimes like to add them at this stage, too.
You can also use balsamic vinegar (and then omit the sugar because it’s quite sweet), or apple cider or spirit vinegar.
Generally, biltong spice mixes consist of a mixture or all of the following: coriander seeds, coarsely ground black pepper, dried garlic, paprika, chilli flakes, cumin and more.
I highly recommend purchasing a biltong dryer. These consist of a box with bars and hooks to hang your meat on, and critically, a fan and light that help to dry the meat and prevent mould from growing. I have seen many a grown man weep at the sight of his well-coddled biltong covered in ominous green-grey fluff!
But, if you’re a bit of a gung-ho cowboy type, you could try setting up your biltong in a dry spot. Simply hang the strips on hooks made from paperclips and point a fan onto them. This will not only help the meat to dry, but it keeps the flies away, too.
Once your meat is dried, you need to find somewhere safe to store it (not only for protection from the elements, but from biltong thieves, too!).
In winter, or in tropical areas where there is a lot of moisture in the air, I recommend that you keep it in the fridge or freezer to prevent it from going mouldy, and then take it out as you need it. In summer months, an airtight container in a cool cupboard should suffice.
BASIC BILTONG RECIPE
2.5 kg silverside or topside beef (or any other meat of your choice) 6 Tbsp (90ml) Safari brown vinegar 4 Tbsp (60ml) Wellington’s Worcestershire sauce ¼ cup (60ml) sugar (optional) 2 Tbsp (30ml) good quality sea or pink salt 1-2 Tbsp (15-30ml) Freddy Hirsch Biltong Spice
1 Tbsp (15ml) good quality sea or pink salt 6 Tbsp (90ml) coriander seeds, roughly crushed 1 Tbsp (15ml) Cape Herb and Spice ground black pepper
Other things to add to your spice mix: Dried oregano Sweet or spicy paprika Ground or whole cumin seeds Chilli flakes
1. Prepare the beef: cut the meat into strips roughly 1.5cm to 2cm thick by 5cm wide.
Be sure to cut along the grain . Each strip should be around 15cm to 25cm in length.
2. Mix the vinegar, Worcestershire sauce, sugar, and 2/3 of the salt and spice in a large, shallow glass or ceramic dish (a lasagne-sized roasting dish works well for this). Lay the strips in the brine and coat them well on all sides. I leave them for an hour or two, and then flip them over and leave for another few hours. You can marinate them for up to 24 hours if you like a good, strong flavour.
3. Remove the meat strips from the marinade and roughly pat them dry with paper towel. Don’t dry them too well, as you want some moisture for the spice to stick to.
4. Season the meat by rubbing the pepper, remaining salt and coriander on all sides until the meat is well crusted in spice.
5. Dry the meat. You can either hang it in a cool, dry place and aim a fan at it, or hang it in a biltong dryer.
6. Dry the meat for 3 to 4 days. It should be hard on the outside and a little bit moist on the inside.
Making your own biltong is actually very simple and also hugely rewarding. Nothing quite beats the feeling of slicing into your own, homemade stick!

What Is Brown Vinegar? (5 Most Common Uses)
Vinegar is basically acetic acid. This acid is produced when bacteria are added to any type of alcohol . Each type of vinegar has its own flavor profile.
In this post, we’re going to be specifically looking at brown vinegar which is also known as malt vinegar . Both white, brown, and those in between are extremely useful both for cooking and cleaning .
We’re going to take you through exactly what brown vinegar is as well as some of its many uses.
What Is Brown Vinegar?
Types of vinegar
Apart from the color difference, there are differences in how the various kinds of vinegar are made, how they taste, and what they’re best used for.
All vinegar is made by fermenting alcoholic liquid of some description, whether it’s grapes, barley, or apples. This results in a sour liquid that is full of acetic acid.
- Brown vinegar
This is a derivative of barley-based beer making which is why it’s also known as “malt vinegar”. It is the vinegar of choice for sprinkling over traditional fish and chips.
- White vinegar
White vinegar is probably the most common type found in most households. It has a sharp, pungent flavor and strong smell. It is usually distilled from grain .
This vinegar is best for pickling, zesty sauces, and balancing very sweet ingredients in recipes .
- Apple cider vinegar
This common vinegar is made with fermented apples . It is a lovely golden color with a tart but a fruity flavor that works well in salad dressings and chutneys.
It is said to have numerous health benefits.
- Balsamic vinegar
This classic Italian vinegar is more black than brown . It has become hugely popular in recent years thanks to celebrity chefs drizzling reductions of it on white plates .
This is the only kind of vinegar that isn’t made by fermenting alcohol . It is made in a similar way to wine – by pressing grapes then aging them in oak barrels . It is sweet and punchy in flavor, making it perfect for salad dressings .
- Rice vinegar
Rice vinegar is Asian in origin. It is made from fermented rice wine . It has a sweeter taste than many other vinegar types so it is useful for pickling vegetables or in Asian sauces, dressings, and stir-fries.
Now that you have an idea of the basic types of vinegar and how they’re made, let’s get back to the uses of brown vinegar.
Uses for brown vinegar
- This is the best vinegar to use on fish and chips along with a little salt .
- It is great for pickling vegetables like beetroot, onions, and most chutneys.
- Use it for red meat marinades .
- As with other vinegar, brown vinegar is good for gut health . It can destroy harmful bacteria in the gut which is probably why ancient Roman soldiers drank it to ward off dysentery. It is also useful for sore throats and urinary tract infections .
- Brown vinegar can be used as a general-purpose household cleaner. However, because it has a lower acidity , it is not as effective as white. Also, because it has an obvious color, it may stain fabrics so it’s best just used for household surfaces. Being a natural product, it does not contain the harmful chemicals that many other household cleaning products contain. Here’s how to use it around your home:
- Use it to remove limescale from the kettle or stains from your coffee pot. Simply dilute it 1:1 with water and leave it to soak for a couple of hours. Clean the appliance with a scouring sponge, rinse well, and you’re good to go.
- Use a mixture of brown vinegar , water , and a few drops of essential oil in a spray bottle to clean your windows. Polish with a microfiber cloth .
- Vinegar is great to add to the laundry for stain removal , odor elimination , and for keeping towels fluffy . Add a couple of tablespoons to the detergent before starting the wash cycle. This is especially useful when washing sweaty sports clothes .
- Mix brown vinegar in a 2:1 ratio and use it to wipe down your kitchen countertops. It is a natural anti-bacterial and can remove stains. Please note – do not use vinegar to clean marble or granite tops .
- Bathroom cleaning. A mixture of brown vinegar and salt can be used to remove limescale and other dirt from bathroom fittings like taps, showerheads, and baths . Make a paste, apply it, and leave it for a couple of hours . Then go back, wipe it off, and admire your shiny new bathroom! Put 2 cups of brown vinegar into the toilet and leave it overnight . This will remove stains and kill germs . Give it a quick brush in the morning.

Only the freshest and juiciest grapes and apples are selected to go into our products. SA’s world-renowned Cape Winelands are where we source grapes for our wine and grape vinegars. The finest locally grown apples are sourced from the Western Cape’s Elgin area for our apple cider vinegar. All our vinegars are produced for a variety of tastes, applications and uses.
Our vinegars are available in supermarkets across South Africa in pack sizes from 250ml to 2L in PET and glass packaging. We supply the catering and home industry sectors in pack sizes from 250ml to 25L Drums.
