  • Breakfast, and set off on your drive to the Sahara! The drive will take about seven hours, but we’ll break it up with lunch in a local Berber house in the Draa Valley to enjoy a tasty tagine.

Moroccan Gastronomy Tour

8 Days from £790 per person

One of the many reasons to visit Morocco is to sample its unique cuisine. Of course most people have heard of the tagines but it goes a lot deeper than that – exquisite pastries and amazing vegetable salads. What is more you don’t have to enrol in a cookery school to understand the most important aspects of Moroccan cooking – it is about meeting the people and cooking and eating as a family or with friends.

Over the years we have gathered a great knowledge of the best places to see and experience Moroccan cooking but this is the first time we have brought it all together in one 8 day tour. Highlights include: – Chef’s Souk tours in both Essaouira and Marrakesh – Bread making in Atlas Mountains – Berber family lunch – Moroccan pastry demonstration – Gastronomic last meal in Marrakech

Your Itinerary

Day 1 - Coast First

Arrive at Marrakech airport where your driver will meet you and take you straight down to the coast. Your base for the first few days is Rebali Riads in a small beachside village just south of Essaouira. It is an amazing place to relax and slip into the rhythm of Moroccan Rural life.

Day 2 - Chef's Souk Tour

In the morning you will head into the souks of Essaouria with the Rebali chef (who speaks good English) and he will guide you around the meat, fish and vegetable souks, the part of the Medina that most tourists miss. This is a great way to be introduced to the ingredients you will be using and see a professional haggler in action…

After a couple of hours you are back at the riads and your villa kitchen is the base for your first hand cooking experience. Some clients like to view from the breakfast bar (with a glass of something not very Moroccan…) and just watch the chef in action. Equally, if you want to participate that is, of course, very much encouraged. After all this work you will eat the results of your efforts, normally as a late lunch, and you will want to keep the evening meal light later that day.

Day 3 - Berber Lunch

Today you are not doing any cooking but instead visiting a traditional Berber house for lunch to see the famous hospitality first hand. We encourage you to go without an interpreter and just put yourself in their hands. Simple surroundings, wonderful food and an insight into a totally different culture.

It is also a small working farm and after lunch you have the option to have a farm tour and see the regional speciality, Argan Oil, being made.

Day 4 - Camel Picnic

This is your final day on the coast and we include a camel picnic (camels are the transport not the food…). Your camel comes into the riad garden to collect you and then it is off up the coast for around an hour on your “ship of the desert” and your host will prepare and lay out your picnic with, of course, the obligatory mint tea – yes, even on a picnic.

On return to Rebali the afternoon will be taken up with a pastry making demonstration. Our pastry chef doesn’t speak good English and if you would like a more formal lesson this can be arranged at a local cookery school for an additional £50 per person.

This is your final evening on the coast and we’d suggest an evening in Essaouira to try out one of the many restaurants or even the wonderful “le Kaouki” just a short stroll from Rebali.

Day 5 - Explore Marrakech

This morning you will take a transfer to Marrakech to the wonderful Riad El Zohar, right in the centre of Marrakech’s old Medina. There is nothing pre-arranged for this day but we’d recommend a walking tour of the Medina in the afternoon, visiting a mixture of historic sites and the souks. In the evening either eat in the riad, soak up the night-life at Le Comptoir or try out the famous BBQ’s in the main square.

Day 6 - Cooking Demonstration

The main activity today is to enjoy another cooking demonstration and tour Marrakech’s food souks, followed by cooking and eating the results of your work. This is similar to your day in Essaouira but is a great way to really understand the way food is prepared and contrast two different styles. If you prefer a more formal cooking session this day we can book you into the famous Maison Arabe cooking school at the cost of £80 per person

Atlas Mountains Kasbah

Day 7 - Atlas Mountains

A complete change of scenery and it is off into the mountains for the day. You start with a visit to an organic spice garden in the foothills of the Atlas Mountains where you will be given a tour of the produce, join in a bread making demonstration and even enjoy a traditional foot spa…The morning finishes with lunch and then you take a scenic drive over one of the highest mountain roads for panoramic views and mint tea in a Berber village. For the more active we can arrange a scramble up to the best waterfalls in this part of the Atlas – please tell us your preference on booking.

Building up an appetite is a good idea as your last night in Marrakech will be the culinary highlight eating at at one of the Medina’s best restaurants.  A spectacular finish to your culinary tour of Morocco

Day 8 - Home

Our driver will pick you up from the riad to take you to the airport but depending on your flight time, you may have a chance for some last minute shipping or a stroll around the Majorelle Gardens

You can get flights from as little as £100 per person return and do ask us for advice.  Alternatively we can book the flights for you but a booking fee may apply.

WELCOME TO MOROCCO

Welcome to Fez, Morocco’s spiritual and cultural capital, where the medieval medina stands next to magnificent palaces and majestic religious schools and mosques. Our hotel is a magnificent riad, you’ll find yourself in an oasis of peace in the middle of the fervent city.

FEZ COOKING CLASS

Enjoy the first traditional Moroccan cooking class, where we’ll learn how to create some of the city’s most famous dishes. The class will starts with a visit to the maze-like souks to shop for various herbs, spices and other classic ingredients. We’ll then get to sit down together and sample our creations in our first dinner.

EXPLORING FEZ'S ANCIENT MEDINA

We’ll enjoy a private tour of Fez and its medina, the world’s largest car-free urban area and the biggest labyrinth on the planet, where donkeys and carts still roam and rows of tanneries and fine leather shops can be found hidden down its maze of alleyways. A UNESCO World Heritage Site, the medina was founded in the 9 th  century and is home to the oldest university in the world. In the 13 th  to 14 th  centuries it even replaced Marrakech as the capital of the kingdom. Today, many of its exquisite structures remain, including palaces, mosques, noble residences and fountains.

Our tour of the medina will be followed by a quality Moroccan lunch at a fine restaurant.

The afternoon will be free for you to do as you choose, whether that’s exploring the exotic Jnan Sbil gardens or visiting the intriguing Nejjarine Museum of Wooden Arts & Crafts or enjoying a   hammam  purifying ritual back in the riad.

THE IMPERIAL CITY OF MEKNES 

After breakfast, we’ll make our way to Meknes, a small town just west of Fez, a laidback and quiet place, yet with a grand and fascinating history. Indeed, the historic city of Meknes is under the cultural properties inscribed on the World Heritage List. An imperial city, Meknes was once the home of the sultanate during the 17 th century. On our tour we'll visit Dar Jamai Museum, originally built as a palace, now houses the National Museum of Music, showcasing Morocco's diverse musical traditions through instruments, displays, and historical artifacts, it is part of the Fondation Nationale des Musées of Morocco.

MOROCCAN WINERY

The tour will be followed by a visit to one of the most renowned Moroccan wineries, where we’ll explore the vineyards and enjoy several tastings with lunch. Red, white and grey fair trade wines are produced in the region. After lunch, we’ll return to Fez. Relax tonight on your own.

ON THE WAY TO THE DESERT

Today we’ll travel from Fez to Merzouga, a small town within the Sahara Desert. Weather permitting, we’ll pass by Ifrane, high in the Atlas Mountains, and known for its Alpine-style architecture and ski slopes, or Azrou covered in cedar forests. We’ll then stop for a quick lunch in Middelt before arriving in Erfoud for our 4×4 ride to the Merzouga desert camp.

SUNSET AT SAHARA DESERT

We’ll set right in the middle of undulating red sand dunes. This part of the desert is called Erg Chebbi. Legend has it that a noble family refused to help a poor woman in need, so God punished them by burying them under mounds of sand, which created the dunes. Here we’ll enjoy a camel ride at sunset to fully appreciate our magnificent surrounds.

We’ll return to camp for a delicious dinner, where we’ll relish a great home made dinner. We’ll then retire to our luxurious tents for a night under the stars.

HASSI LABIED OASIS

From the middle of the sand dunes, let's depart on the 4x4's to reach the Hassi Labied Oasis, one of the most unknown spots, very close to the border with Algeria. The natural beauty is spectacular and unexpected, the place can be considered a miracle in one of the most arid areas. This area, that was used by the old Paris-Dakar, looks like right out from a movie set with its dirt and stone roads, outlined on the horizon by the Boutcharfine mountains, and keeps the best kept secret; the Saf Saf oasis with its sources of crystalline water stream and home of the last nomads of the desert who resist changing their way of life.

UNWIND IN THE DESERT

Unplug tonight, this is your second and last night in the desert, a magic moment not to forget. A lovely aperitif will be set for sunset, one more traditional dinner will be served with care and passion, and let you go and enjoy the traditional Gwana music! 

THROUGH THE 1001 KASBAHS ROUTE

Today, time to leave the desert across the 1000 kasbahs. Along the way we’ll stop the Ksar El Khorbat Foundation set in an old ksar (fortified village) dating back 1860 built of soil. The Foundation aims at developing the economy of its inhabitants through the ecotourism. Here we’ll learn all about the nomadic Berber tribes, their culture and way of life. Enjoy a traditional home-made meal before heading to Ouarzazate. On our way we’ll make a second short stop at one of the most iconic and well preserved kasbahs in Morocco: Kasbah Amridil.

SLEEPING IN THE MIDDLE OF A PALM GROVE

Find yourself in the middle of Ouarzazate's palm grove in a traditional ocher-colored palace, earth and rammed earth, with tataoui ceilings, zellige walls, zouak doors, where every suite is named after a gemstone. In the evening, the play of light sublimates the palace, the stars are clearly visible and the frogs and crickets break the silence of the night. Be ready for a restorative dinner tonight.

AIT BEN HADDOU

Today we’ll transfer from Ouarzate to Marrakech. Along the way we’ll make a stop at Ait Ben Haddou, located on the lower slopes of the soaring Atlas Mountains. A fortified village made from traditional mud brick, this UNESCO World Heritage Site is one of the most famous ksars  in the region, and one of the best examples of typical southern Moroccan architecture. This giant sand castle-like structure was built around the 17 th century, and today there are still several families who live there. We will then continue our road through Tizi n’Tichka mountain pass before reaching Marrakech just on time for lunch.

A DREAM EVENING AT LA MAMOUNIA 

After check-in relax before we meet for dinner. You can check the Bars & Restaurants at La Mamounia, the garden pavilion by Pierre Hermé or the Tea Room by Pierre Hermé. Or you can go to the gym, stroll around the sumptuous gardens (8 hectares), enjoy the indoor or outdoor pool… Time is yours! Then we'll head for dinner for an international taste.

One of Morocco’s most exotic cities, Marrakech will dazzle all the senses. Known as the ‘ochre city’, Marrakech is filled with both grandeur and charm, from its mosques to its old medina. Today, we’ll embark on a city tour, exploring sites such as the magnificent Madrasa Ben Youssef, an architectural marvel showcasing intricate Islamic design. Explore its captivating courtyard and intricately decorated rooms that echo the city's rich history. Other places we’ll pass include the grand 12th-century Koutoubia mosque and the lively Jma-El-Fna square, a bustling hub of Moroccan culture and entertainment.

But that's not all! In addition to our cultural exploration, we're excited to announce our second shopping tour, this time focused on stylish clothes, natural cosmetics, and modern Moroccan design. Discover the vibrant markets and boutique stores, offering a delightful array of fashion, beauty products, and contemporary Moroccan creations.

After our city tour, indulge in super traditional and tasty lunch, symbol of Marrakech’s cuisine.

The evening will be free to do as you please, whether that’s shopping the rabbit warren of underground souks for glittering lamps or experiencing the sounds and smells of Jemaa el-Fnaa square, or simply stay at the Mamounia oasis to pamper yourself.

MARRAKECH COOKING EXPERIENCE

We will attend today our second Moroccan cooking class in a legendary riad-hotel-cooking school, a real sanctuary of tranquility, in the heart of the ancient medina of Marrakech: La Maison Arabe. The workshop will be conducted by a dada (a traditional Moroccan female cook). We’ll then eat our labor for lunch! 

FAREWELL DINNER

In the evening, we’ll be treated to a special surprise farewell dinner, details of which we can’t reveal!

END OF JOURNEY

Then he moved to Washington DC with José Andrés at ThinkFoodGroup (it was here where he met Katie Button), and he worked as Director of Service and helped with developing and opening new restaurants, including The Bazaar by José Andrés in SLS Hotels across Beverly Hills, CA, Las Vegas, South Beach, Miami, and Puerto Rico. Co-partner at CÚRATE , Felix’s close relationships with Spain, coupled with a sense of adventure and desire to share that with others, has helped him build a unique travel experience through Cúrate Trips.

Dating back to 9th and 11th centuries respectively, they offer a tangle of narrow streets surrounded by high walls and filled with old world charm. Day 1: Check into Marrakech.

Welcome to Morocco! Rendezvous with your English-speaking driver in the arrivals hall of Marrakech Menara Airport, and then pick up a private car at your city hotel. The time left is free for you to recuperate from jet lag or look around.

Day 2: Marrakech, the Old Quarter

Today you will have a full day to learn about architecture, history and local life in Marrakesh's old quarter. Following your guide, you will visit the tiny and delicate Bahia Palace, the Saadian Tombs, and the magnificent Koutoubia Mosque. Today's tour will end with an exploration of the souk of Jemaa el-Fnaa, one of the world's most exotic markets.

Day 3: Marrakech, one day in the life of Berber.

The ochre city of Marrakesh was the capital of an old empire built by the Berbers in the eleventh century. To experience the traditional life of Berbers, you will spend some time in a small village learning some of the daily tasks, such as baking your bread, making your tagine, cooking on coals, milking the goats, fetching water at a well, and making mint tea.

Day 4: Marrakech - Fez, Tailor Your Own Perfume

This morning's olfactive experience invites you to adapt your own perfume from basic ingredients. In the studio of Mr. Benchabane, named after the artist who created the famous Soire de Marrakech perfume, you will discover musk, lavender, and jasmine to create your very own perfume with the help of a palette of fragrances. Mr. Benchabane will give you helpful advice in the meantime. Depart Marrakech after the perfume tour and arrive in Fez after around six hours.

Day 5: Fez, Fez Medina

Fez, the first Islamic city in North Africa, was founded in the 9th century and reached its height between the 13th and 14th centuries when it became the capital of the kingdom instead of Marrakech. It is known worldwide as Morocco's cultural and spiritual center.

Take a trip to the Medina of Fez at first. It's an excellent place to feel the local life. You can stroll around the maze-like street and purchase some fresh fruits or exquisite souvenirs. Continue to visit the King's Palace and some tanneries. After the tour, spend some leisure time exploring the old Fez.

Day 6: Fez, Cheese-Tasting

This morning you will cycle to Bhalil, a quiet village known for its unique cave houses that are still alive with people who live there. In the village, you can optionally join the locals in organizing a traditional morning tea.

Later, move on to Immouzer, which is particularly beautiful in spring with apple blossoms. And then to La Pommeraie - a private property increasingly known as a region for cheese production, and its cheeses are exclusive to Morocco's leading hotels and restaurants. Here, you will sample the cheese and enjoy a BBQ lunch before returning to Fez.

Day 7: Fez - Rabat, Roman Ruins of Volubilis & Moulay Idriss

Driving to Rabat, your first stop will be Meknes. You can marvel at the Roman Ruins of Volubilis with well-preserved columns, visible streets, houses, oil mills, public baths, markets, and mosaics. Your second stop is the holy city of Moulay Idriss, where Morocco's first Islamic ruler, Idris I, is laid to rest.

Day 8: Rabat, exploration of the capital.

Rabat replaced Fez in 1912 as the Moroccan capital. The imperial city now includes the old town built in the 18th century and the new town built after 1912 when it became the protectorate of the French. Both of these two parts are on the UNESCO list. Today, you will have a guided tour to explore both its new town and old town, including Kasbah of the Udayas, the Testing garden, Almohad gates, Hassan Tower, the Mausoleum of Mohammed V, and Habous neighborhood.

We start our Moroccan adventure in the morning with a guided walking and panoramic tour including the Square of Mohammed V, walk through Old Medina, The Hassan II Mosque and the new Habous Quarter with its wonderful olive and preserved vegetable market and souks. We also visit the Temple Beth-El – introducing you to the Jewish history of Morocco, we wander through the Nouvelle Medina and Ain Diab. Lunch is in a traditional Fish restaurant where we sample an array of dishes celebrated with fresh herbs and the lesser popular but very delicious green charmoula. We return to our accommodation giving you some free time before our dinner in our Riad. B/L/D Overnight in Casablanca 

After breakfast we check out and drive to Rabat. We stop in Rabat to spend the day visiting Hassan Mosque, Oudaya and Mohamed 5th mausoleum and wander the medina, Markets and Souks. We stay for lunch, then in the afternoon, we drive to Chefchaouen. Built on a mountainside, Chefchaouen gives an impression of unreality. With its blue-rinsed houses, the whole city seems to be bathed in azure. More than just an ornament, the beautiful Chefchaouen with its rich heritage brims with attractions. We check into our Hotel giving you free time in our beautiful accommodation, we meet in the evening to enjoy dinner at the hotel. B/L/D

After breakfast we head out early to explore this Ochre city. We take you on a guided tour to visit the sights, the Medina and it’s souks. The inescapable Medina with its famous narrow winding alleys, is an opportunity to mingle with the local population, and to smell and taste delights: from freshly baked bread, to skilfully prepared tagines. After our tour we give you the day to wander and lunch on your own. We head back to the hotel to give you a chance to rest, we will then meet and head back to the Medina for the sunset and dinner in a local restaurant. Overnight in Chefchaouen. B/D

Outcry in Morocco after Netanyahu presents map of kingdom without Western Sahara on French TV

Even though the Israeli prime minister has recognized Rabat's sovereignty over this territory, Moroccan newspapers see it as a provocation.

"A mistake." This is how Hassan Kaabia, the Israeli Foreign Ministry's spokesperson for Arab media, justified Benjamin Netanyahu's presentation, during his interview on French channel LCI on Thursday, May 30, of a map of Morocco without the Western Sahara. This is "a non-autonomous territory," according to the United Nations, but Rabat considers it to be under its sovereignty.

Faced with the outcry in the Moroccan press and on social media, the ministry's spokesman for Arab media engaged in an unusual exercise in contrition. On the social media network X, Kaabia addressed King Mohammed VI directly: "We apologize for this technical error."

During his interview, Netanyahu cited Morocco as "one of the many countries in the Arab world" with which Israel "has made peace," in reference to the Abraham Accords and the official resumption of relations between Rabat and Tel Aviv in December 2020. In support of his argument, the Israeli prime minister held up a map showing Morocco in green and the Western Sahara in white.

Moroccan critics were quick to respond. The news site Médias24 described the gesture as an "indecent act." “Should this map be seen as a provocation?” asked the magazine Telquel , while the Istiqlal party daily L'Opinion condemned it as "an attack on Morocco following its condemnation of aggression against Palestine."

Rabat, which still refuses to ratify the Rome Statute establishing the International Criminal Court, has not reacted publicly to the request of its prosecutor, who on May 20 asked for arrest warrants to be issued for Netanyahu and his defense minister. Moroccan did, however, welcome the decision of the International Court of Justice, which on January 26 enjoined Israel to take "all measures within its power to prevent and punish direct and public incitement to commit genocide."

In July 2023, in a letter addressed to King Mohammed VI, the Israeli prime minister recognized Morocco's sovereignty over the Western Sahara. But the first hiccup came in October, when a photograph of his office showed a map of Morocco "without its Sahara," according to Moroccan newspapers.

At the time Netanyahu's office said that it was an "old" map and that it was being replaced. Israel had already been forced to explain itself publicly, which makes its embarrassment, since Thursday evening, after this second blunder, all the more obvious.

"Netanyahu immediately realized that the map was wrong and that it did not correspond to the official maps used by the Israeli government," said Asher Fredman, Israeli director of the Abraham Accords Peace Institute, the body responsible for assessing the progress of normalization treaties between the Jewish state and Arab countries.

Standardization 'crumbling'

Unintentional as it may be, Netanyahu's mistake comes at a time when observers of the bilateral relationship are pointing to the "crumbling" of normalization between Morocco and Israel. The number of weak signals has been increasing since the Hamas attack on October 7 and the siege of Gaza by the Israeli army.

Parliamentary diplomacy is at a standstill, government meetings have ceased and direct flights between the two countries remain suspended. As for the prospect of an Israeli consulate in Dakhla, one of the main towns in Western Sahara, which Netanyahu had said he would "positively" consider opening in the summer of 2023, it has never seemed so distant.

Nevertheless, economic exchanges are continuing, this time without publicity, as is military cooperation, which is at the heart of the rapprochement between Rabat and Tel Aviv. On this point, the two capitals converge in their analysis of the situation in Western Sahara. "Moroccan sovereignty [over this territory] is a matter of security for both Israel and Morocco. We must repel the destabilizing activities of the Polisario Front, which is armed and financed by Iran," said David Aaronson, deputy director of the Abraham Accords Peace Institute.

Rabat, which believes that the Sahrawi independence fighters are supported by Tehran and participate in the actions of terrorist groups in the Sahel, recently pointed to their links with Russian mercenaries based in West Africa. A week ago, the Moroccan press reported that some 500 young people from the Saharan camps near Tindouf had been recruited into the paramilitary force set up by Moscow in Mali.
