You get the feeling Sam Heughan doesnât do well with idle time: While starring in the hit Starz show Outlander , he managed to release both a New York Times bestsellerâ Clanlands , written with co-star Graham McTavishâand an award-winning whisky brand, Sassenach (âHopefully wherever you are in the world, if you taste it, it'll take you back to Scotlandâ). Now, heâs adding âtravel show hostâ to his expansive resume, teaming up with McTavish again on Men in Kilts: A Roadtrip with Sam and Graham . In a period of respite between surging COVID-19 numbers last summer, the pair loaded up a camper van and drove across Scotland, making stops in Edinburgh, Glencoe, Skye, Lewis, Inverness, Braemar and more, exploring Scotlandâs food, sports, music, superstitions, history, and culture.
We caught up with Heughan ahead of Men in Kilts â February 14 debut on Starz to learn about the highlights of his adventures with McTavishâas well as the moment when things got a bit, well, chilly.
How did the idea of a travel show with Graham come around?
Working on Outlander , I saw and loved the enthusiasm about Scotlandâabout the Highlanders and Highland culture. Initially, we were discussing making a podcast, but then it really sprouted arms and legs and was fully formed and turned into this show that we have nowâjust exploring Scottish culture and sharing that with the rest of the world. Who wouldn't want to go on a road trip and eat great food and see great sights?
Shooting a travel show in the middle of 2020 must have been a logistical nightmare. Walk us through what it was like.
It was just after the first lockdown, so things were opening up in Scotland. I think, to be honest, we were a little bit of a guinea pig for other productionsâwe were one of the first ones to go. Because it's a small show and very contained and we were up in the Highlands of Scotland, the risk was relatively low. But it was a new world of shooting in this COVID environment, and it was a lot to get your head around the different protocols. We're very, very lucky that we're safe, and that we're able to keep working when other people aren't, so hopefully we can bring a bit of joy to people during this time.

I read that there was a 67 percent increase in tourism to a lot of Outlander locations. Do you feel a responsibility, in a way, of being this global ambassador for Scotland?
Not a responsibility, but I feel very honored that Scotland has been celebrated through Outlander . Certain historic buildings that we've shot at have received incredible numbers of touristsâDoune Castle, which we feature in Men in Kilts but also in Outlander, had over 200 percent increaseâand a lot of these buildings have been able to regenerate and rebuild. So it's been a fantastic way to support these historic buildings and the tourism industry. I learned a lot about Scotland doing Outlander , and just wanted to learn more. So I got myself a trusty camper van and filled it full of Scottish goods and my bearded friend, and we set off.
Even without the pressure of a show, picking the right travel partner can make or break a trip. How did you decide to do this journey together and what was that dynamic like?
On the exterior he's this gruff, aggressive Scotsman. He plays lots of very macho characters in TV and filmâbut actually, in real life, Graham is a big pussycat. He has such a big heart, heâs a lot of fun, and heâs a great historian. And I think that we complement each other: I am a bit more of a doer; I like to go and do activities and get out there, and he's probably a bit more reluctant. He's definitely one that likes to be driven around and recline and get snacks and cafe lattes as much as he wants. We really are each other's yin and yang. A lot of the time I'm winding him up and putting him in places where he doesn't want to be. But that's the joy of the show, right?
Although he also put you in a place that you might not have wanted to beâI know it's called Men in Kilts, but you had a little kilt-less dip in the Atlantic, didn't you?
How did that come about?
Well, during the sports episode, weâre playing golf at St Andrews, we're playing rugby, and we're at the home of the Highland Games in Braemar...And we decided to have a little competition and whoever lost would have to skinny dip in the North Sea off the coast of Lewisâand it's pretty damn cold. Normally when people go out swimming or surfing there, they're wearing a wetsuit. So, yeah, I wouldn't recommend it for anyone that's touring Scotland.

Other than North Atlantic water temperatures, what did you discover about Scotland through shooting Men in Kilts ?
Most people who come to Scotland go to Edinburgh and drive straight up the coast and back. But if you can get to the islands, they really are magnificent. They have their own character. When we go to Lewis and Skye , they are just incredible to visit. One of my favorite things to do is get a ferry from the mainland to the islands. You get to see the mainland and the wildlifeâthere's dolphins, whales, sea eagles. And then of course when you approach, the island sort of comes out of the mist and it is very romantic and quite powerful.
What was the best thing you ate on this trip?
The first episode is about food and drinkâŠ[and] itâs so hard to pick the best thing we ate. Tony Singh, who is this wonderful Scottish chef, made us freshly caught lobsterâwe'd caught it that morningâwith seaweed and chili butter, which we cooked on the fire on the beach. And he boiled some new potatoes in the seawater with some seaweed as well. He added garam masala, a bit of spice, and it was, honestly, the best thing I've ever tasted. And just being there on a Scottish beach. That day we had already eaten fish and chips on the harbor, but as soon as he started cooking that lobster, we were so hungry. It was just mouthwateringly magnificent.
When you look back at this trip years from now, what do you think will be the highlight of the entire adventure?
There's just so much we did, from the marching bands on Calton Hill to [visiting] Culloden with historians, to the surfing, to the castles we visit. There's just so much. And I'm such a huge sports fan, so going to Murrayfield [Stadium] and getting to kick a ball was a dream come true. But to be honest, I think it's about the friendship: Going on this great road trip with a good friend of yours and getting to share a few whiskies along the wayâit was a great experience.

Scottish food is quite unlike any other food in the world. Hearty, unique, and downright delicious, great food and drink are an integral part of experiencing Scottish culture. Many traditional dishes we’ll cover today have been perfected over generations and use natural, local produce from earth, air, and sea. If you want to attune yourself deeply to Scotland, there’s no better way to do so than trying these Scottish foods and dishes.
So, from haggis, neeps, tatties, Cranachan, and many more funny-sounding words that we assure you taste delicious, look out for the following traditional dishes while visiting Scotland.
In This Post
Our first traditional Scottish dish is also the national dish of Scotland! Haggis is the iconic national dish that you’ve likely heard about at one point. It is made from animal innards, usually sheep, which are mixed with fresh onions, oatmeal, seasonings, beef suet, and dried herbs.
These ingredients are brought together and cooked inside the lining of a sheep’s stomach â delicious, right? Traditionally served with neeps and tatties, haggis is the meal every Scottish child grew up with and learnt to savour, even if it doesn’t sound as appetising from an outsider’s perspective.
Scotland’s national dish takes a real adventurous spirit to try, but rest assured that once you get over your initial apprehension you’re in for an authentic Scottish delicacy.
Fish and Chips
Fish and chips are likely another delicious Scottish food that you’ve heard of. It’s not only a famous food in Scotland but is beloved throughout the rest of the UK as well. You’ll see it referred to as a fish supper in Scotland, and you can find this scrumptious meal abundantly in fish and chip shops throughout the country.
If you can get fish and chips near the coast, then you’re in for a real treat! Freshly caught and fried fish, and triple-cooked fluffy chips, all smothered in salt and brown sauce, is a heavenly meal after you’ve spent a day exploring attractions. And while this may be a controversial opinion, Scottish fish and chips are the king amongst the fish and chippies you can find throughout the UK â don’t believe us? Why not try it for yourself?
While it’s not a meal you should have every day, a proper fish and chips is a rite of passage for anyone coming to Scotland.
Cullen Skink
In the northeastern corner of the country, the delicious Cullen skink was created in the Scottish town of Cullen. Cullen skink is a thick Scottish soup usually made with fragrant smoked haddock or another smoked fish, potatoes, onions, and a creamy broth to die for. Add in a toasted slice of bread and you’ll be asking for another bowl in no time.
Cullen skink is quite close to American chowder or French Bisque but is considered to be smokier and heartier than either. It is an unrivalled comfort meal on a cold day that can be found throughout Scotland â although Cullen is the true home of this Scottish cuisine staple.
Deep Fried Mars Bars
While many of Scotland’s dishes originate from home-cooked meals cooked by generations of Scottish families, the deep-fried Mars bar is a relatively new addition. John Davie invented this union of deep-fried goodness and sweet chocolate while running the Haven Chip Bar in Stonehaven (a town near Aberdeen).
He battered a Mars bar with flour, eggs, and milk before dunking it in the deep fryer. The result was a crispy battered coated that held a melted chocolate centre. As you can imagine, the deep-fried Mars bar was an instant hit and can now be found in ‘chippies’ all over Scotland. If you have a sweet tooth, don’t miss the opportunity to deep fried goodness!
Scottish Porridge
Only a few people know that porridge originated in Scotland, although the Scottish porridge has a slight twist compared to the porridge you know and love. Instead of sugar, Scottish porridge has salt added to it. You get a hot, savoury breakfast meal that is cheap to make and delicious to eat.
If you want a little sweetness when trying Scottish porridge, don’t worry â many places offer this breakfast meal with fresh raspberries, strawberries, and more to instil some natural sugars into the traditional Scottish dish. Scottish porridge has been a staple for Scottish locals for centuries, so why not embrace this filling breakfast before you start a day of sightseeing in the Highlands ?
Neeps and Tatties
Neeps and tatties are the adorable Scottish terms for turnips and potatoes, a coupling that has accompanied the best food in Scotland. The turnips and potatoes are traditionally boiled and then mashed, creating a creamy and flavourful pairing to roasted meat you can’t help but dig into.
Although they’re traditionally served with haggis â creating the ‘Burns Supper’ â you can find this healthy and hearty set of sides in many Scottish menus, from the Borders to the Highlands.
Scottish Tablet
A Scottish tablet is not an ancient inscribed stone but rather a delicious crumbly treat similar to fudge. A traditional Scottish tablet is made from butter, condensed milk, and sugar, which is then crystallised to form yummy hard candies. They make for fantastic road snacks, and if you want to know where you can find the best Scottish tablets then look no further than the Isle of Skye .
Best of all, they come in various flavours, from standard cream and vanilla to smooth whisky. If you don’t drink but want to experience the diverse whisky culture of Scotland , then a flavoured Scottish tablet may be the next best thing. Add this sweet tooth special to your food tour as a dessert you can enjoy.
Guests coming to Scotland during the holidays should try Cranachan, a traditional Scottish treat that was originally a harvest time celebration. Historically, Cranachan was served after June’s raspberry season but now can be eaten during holidays throughout the year â especially Christmas.
The dessert is made from whipped cream, whisky, fresh raspberries, oat groats, and honey and served in a tall glass. The ingredients are layered one after another, forming a dessert that is almost too pretty to eat… almost. Some places even allow guests to layer their Cranachan, letting them create the perfect dessert for themselves.
Cranachan is considered the ‘uncontested king of Scottish dessert’, but we’ll let you decide if that’s true.
Full Scottish Breakfast
Scotland is known for their whisky, gin , and rum. And after a night of sampling the finest liquor that Scotland has to offer, there’s nothing better than indulging in a full Scottish breakfast the following morning.
A Scottish breakfast has all the delicious staples you expect, from sausage meat, fried eggs, baked beans, tattie scones, black pudding, fried tomatoes, toasted bread, and hash browns. What more could you want? Places throughout Scotland also offer local twists on this Scottish staple, with no breakfast the same wherever you go.
If you need energy to explore the attractions that Scotland has to offer, a full Scottish breakfast is the ideal start to your day.
Stovies are a delicious starter that can fill you up quite quickly if you’re not careful. Made primarily from potatoes along with onions, carrots, fat, and meat, stovies are stewed and served to accompany a meal â usually with oat cakes for some crunch.
There’s nothing better than a stovie on a cold day so if you see this scrumptious starter and side on the menu while in Scotland make sure to pick it.
Black Pudding
The far-flung Outer Hebrides of Scotland have a wide selection of regional Scottish food that you should not miss â most of all, black pudding. This treat is made from pork blood, oat groats, oatmeal, pork suet, and a number of spices. The amount of oats in Scottish black pudding separates it from the other kinds of blood sausages you’ll find worldwide.
While black pudding may stoke the same fears as haggis, you should take the leap and try this tasty piece of Scottish cuisine with a part of a full Scottish breakfast. And if you want the real stuff, grab a bit of Stornoway black pudding during your culinary trip to Scotland.
Scotch Whisky
A slight departure from food, but we can’t mention famous Scottish foods without throwing in something to wash it down with. Scotch Whisky is locally produced in many parts of Scotland, each adding its own flair to the smooth and flavourful alcohol. The Isle of Islay , Campbeltown, the Scottish Borders and the Highlands are all prime places to indulge in a wee dram after a hearty meal!
If you’re just as much of a lover of Scottish drinks as you are food, you should also pay a visit to the wide selection of Edinburgh gin distilleries as well.
Scotch Pies
Scotland’s favourite savoury treat, you can’t go wrong with Scotch pies! These decadent mini treats are most commonly found throughout the British Isles as a double-crust meat pie. You know you’re biting into a good Scotch pie when the crust is crispy and flaky, with rich minced mutton meat in the centre. Best of all, you can eat them whether they’re hot or cold!
Scotland takes its Scotch pies very seriously and hosts the World Scotch Pie Championship every year, elevating the heights this humble treat can reach.
Cock-a-Leekie Soup
We can’t talk about traditional Scottish foods without mentioning Cock-a-Leekie Soup. This traditional Scottish soup is also the national soup of Scotland, and for good reason! The soup dates back to the 16th century and has been a warm staple for a Scottish winter night ever since!
Cock-a-Leekie is similar to a French chicken soup, which makes sense considering how many gentry arrived in Scotland from France. It’s a traditional dish made with peppered chicken stock, thickened with rice and barley, and then imbued with aroma thanks to onions and leaves.
Mull Cheddar Cheese
Cheddar cheese from the Isle of Mull isn’t your ordinary cheese. It is one of the finest Scottish delicacies you can try and is exclusive to this small island in the Inner Hebrides. The secret to its rich and creamy texture with a boozy tang is the cow’s milk the cheese is made from.
Isle of Mull cows feed on the fermented grain produced by the nearby Tobermory Distillery , creating a cheese that is quite unlike you’ve ever tasted anywhere before (and potentially some boozy cows). Whether you’re planning to use it for Scottish cooking or to enjoy on a cracker, we’ll bet you’ll love this unique Scottish cheese.
Specific kinds of beef are the cream of the crop: Wagyu beef, Brahman beef, and Aberdeen Angus beef. This hornless breed of cattle is found in Aberdeenshire but can be seen regularly throughout the North East region of Scotland.

Rumbledethumps
Rumbledthumps are a whimsical-sounding and delicious traditional food in Scotland that can exclusively be found in the Scottish Borders. Arbroath Smokies
When Scottish fishermen would travel out to score a catch long ago, they would bring with them Arbroath smokies to take along the journey. - Day 8 â Discover Skye

- Day 9 â Skye to Argyll
Taking the ferry off the island, youâll sail over the sea from Skye to the mainland and your next stop at a delightful former ferry inn offering wonderful food, service and ambience. Your journey will take you along a beautiful coastline of craggy coves and sandy beaches before passing by historic Glenfinnan where Bonnie Prince Charlie rallied his Jacobite clansmen, and then on past Ben Nevis, Britainâs highest mountain.

- Day 10 â Discover Argyll

A lot of that is down to actor-director Richard Ayoade, who can bend his deadpan wit to provide a foil to whichever fellow comedian he has in tow for that week âs 48-hour city break (including occasional Hollywood stars such as Jon Hamm and Paul Rudd). Itâs basically a comedy but, for all the eccentric hotels , drinking and quirky-museum-hunting, this show is still a reliable indicator of whether youâll enjoy two nights or more in that weekâs destination , so bring on season nine. The Mind of a Chef
Chef-profile shows can merge into a blur of hot men in dark rooms talking about sourcing and knives, but this PBS show is in sharp focus â partly because episodes last just 23 minutes. Each of its five seasons are hosted by a different chef, from David Chang, who presents Netflixâs Ugly Delicious , to Prune author Gabrielle Hamilton, who traces a dish to its source, has a good dig and still manages to get in more travel trimmings than most of the hour-long competition. Season fiveâs resident Ludo Lefebvre is particularly good value â look out for his outraged attempt to reclaim Jersey for France on a lobster-fishing trip. Stream it on Netflix

Steve Coogan and Rob Brydonâs semi-improvised wander between scenically sited restaurants is a journey that bears repeating. The original six-part run through the North of England in 2010, where both idea and stars were at their freshest and there was a real edge of melancholy tod the impressions and repartee, remains the best but itâs hard to argue with Season 2âs finale in Capri, where two middle-aged men talk rubbish against one of the worldâs most beautiful backdrops, and Season 3âs visit to Spain kept up the quality. Panda & Sons, a speakeasy style bar on Queen Street in Edinburgh, has made the list of best bars in the world, according to US-based Food and Wine magazine.
Only 11 worldwide venues made it onto the list, and Panda & Sons was the only bar in the UK to feature.

Panda & Sons was recognised for its latest cocktail menu âTranscendâ , which features sixteen cocktails arranged in four chapters exploring and highlighting a different ultra-low freezing technique known as switching.

Switching is a super-low-temperature technique that effectively removes the water from a spirit which can then be replaced by other liquids without over-diluting, adding extra flavour and texture.
It's this creativity and passion for flavour that has led to the bar, and McPherson, being awarded such accolades and making Panda & Sons a must-visit for cocktail fans.
In late 2023 McPherson joined us on our Scran podcast to chat about winning awards, his career to date and the fascinating work he's been doing around using freezing processes in cocktails, having gone to great lengths to study the science and craft behind it all.
Of the list, Food and Wine said: âThe second annual edition of our Global Tastemakers survey proves that excellent drink making knows no borders. This yearâs class of winners crisscrossed five continents, featuring major cities from Singapore to Sydney and Cartagena to Mexico City.
âThe bars that stood out to our network of food and travel experts embraced the weird and wonderful. As these results make clear, this yearâs most exciting drink destinations are well worth the price of a plane ticket.â

Of Panda & Sons, the team at Wine and Travel wrote: "Entry instructions â find the barbershop run by a pair of well-coiffed pandas and slip into the back â at this Edinburgh speakeasy are slightly silly.
âThese more mischievous elements complement a serious triumph of process, as Panda & Sons owner Iain McPherson is one of the worldâs leading experts on freezing techniques. Heâs responsible for inventing a method of cold infusion called âswitching,â in which water is removed from a spirit and replaced with something more flavourful.
âAs such, classic cocktails have a technical touch, like an Appletini (olive oil-washed vodka, clarified apple, umeshu and Calvados) or the creamy colada with cocoa butter-washed rum.â
This accolade follows on from the bar being named in the top 50 in the world at the end of 2023.
Panda & Sons was the only Scottish bar to place within the top 50 list - it came in at number 39 - and one of only six in the UK to feature.
