In our 21st year now, Bucer’s Coffeehouse & Pub has been roasting our own fine coffee, serving great espresso, baking beautiful pastries, grilling hearty sandwiches, pouring amazing local draught beers, and fine wines, and much more…

We do it all for a vibrant and diverse community that appreciates great food and drink, enjoys live music, and loves to run into their friends here in our pub.

THE ROASTERY

Bucer’s was built on the foundation of carefully selected 100% Arabica coffee, roasted fresh, in-house, every week. Our favorites tend to come from the isthmus area of Latin America (especially Guatemala, Nicaragua, and Costa Rica), the horn of Africa (especially Ethiopia), Sumatra, and Papua New Guinea – but we’re always running into stunning new coffees that we work into our regular rotation.

Our pride and joy – and the focus of our roasting – is our signature Bucer’s Blend. Bucer’s Blend combines beans from Latin America, East Africa, and Indonesia to create a nutty, chocolatey, earthy cup. Balancing these classic espresso notes with a light sweetness and elegant smoothness, it works beautifully as espresso but just as well in a French Press, pour-over, Aeropress, and even as a drip coffee.

Our Roastmaster roasts our coffee a few times weekly with a Turkish-built Toper 10-kilo roaster. The artisan craft originated with Bucer’s founding family and current owner, the Greenfields. Roasting our own guarantees the freshest cup in the region!

The Bucer’s kitchen staff gets started early in the morning, baking our own made-from-scratch muffins, cinnamon rolls, scones, and coffee cake. Our rich quiches come flourless or baked in a fine pastry crust, with options for vegetarians or meat-lovers. Our hearty Pub breakfast pastries and breakfast burritos are filled with eggs, sausage, and cheese. Our panini grilled sandwiches are piled with meats, cheeses, and veggies onto our fresh-baked focaccia bread. Plus a rotating variety of daily soups, pasta salad, brown rice salad (GF), or Asian kale salad (GF), and any number of inspired surprises.

Our homemade dessert selection includes our popular six-layer Guinness Chocolate Cake, Crumb Top Apple Pie, New York Cheesecake, Key Lime Pie, and our rich chocolate truffles and macaroons. Don’t forget to try our signature Affogato with Ferdinand’s local WSU creamery ice-cream.

Every Thursday, Friday, and Saturday night, Bucer’s offers an eclectic blend of live music. We feature jazz, blues, Americana, Indie, folk, rock, etc. and many a singer-songwriter. From our impossibly delicious signature Cuban coffees, to milkshake-thick frappés, to old standbys like lattés and Americanos — we’re simply making the best coffee in Moscow.

Our wine list is curated in consultation with local wine experts and afficionados. Pair a glass with our homemade chocolate truffles, or a bottle with our gourmet three-cheese plate and some friends. Our taps feature a rotating selection of local microbrews—including Bucer’s Paradise, a blend of Paradise Creek’s milk stout with Bucer’s Blend Espresso —together with Northwest classics like Mac & Jack’s African Amber Ale and Terminal Gravity’s IPA or choose one of our many fine bottled brews.

Rounding out our drink menu we have real fruit smoothies blended to order, refreshing classics like Italian sodas, comforting staples like hot chocolate steamed on our La Marzocco. 10. Literary Cafe at the Moscow House of Books

Curl up with a book in a chair in the literary café at the Moscow House of Books on Novy Arbat street. Freshly brewed coffee, hundreds of books on the shelves to read,  relaxed atmosphere. Sometimes you can witness readings and presentations of famous writers and poets.

8. Boucle Cafe

One of the oldest Moscow cafe located in the heart of the capital, on the Arbat street. Sip your coffee and watch literary events, film screenings and musical performances, sitting in one of those soft and colorful chairs.

7. Bulgakov House Cafe

Lokated in Bulgakov House which is famous for its amazing atmosphere: you can pat Behemoth cat, talk on the phone with Woland, indulge in delicious espresso and traditional desserts. Everything is literally saturated here with the spirit of the 1930s: tattered books on the shelves, retro lamps on the tables, vintage interior.

6. West 4 Brew Bar

West 4 makes brewing coffee in siphon a meditative and spectacular process: brown drops falling through the filter paper super slowly. So if are excited to see how your Nicaragua with notes of milk chocolate and hazelnut is progressing, you are welcome to watch the whole process.

5. Double B Coffee&Tea

For coffee sampling here we  recommend Ethiopia – neutral, but lurking mature tones of summer fruits. The drink is served in a glass flask, all power of the drink goes to the flavor – unusual amber hue, soft, fragrant. Warning: do not drink at once, and let it cool down not to miss anything.

Their own coffee shops remind laboratories, which constantly re-invent coffee drinks. There is no kitchen, but there is a large variety of coffee drinks. Apart from the classic espresso-based (cappuccino, latte, ristretto) there is also a large variety of alternative slow ways of brewing: chemex, hario and aeropress.

Double B’s signature drinks are latte with a variety of syrups, espresso with hazelnut mousse “Coffee wind” and raf-coffee, which is prepared on the basis of espresso with the addition of 11% -x cream and vanilla sugar. Worth a try is a lavender raf.

Ingenious method of preparing Australian lungo was peeped from the Australian colleague Matt Perger on World Barista Championship. Double B is the only coffee shop in Moscow that does Australian lungo really well.

Coffee gurus from Double B give some tips for beginning coffee lovers: chemex is served in a recognizable vessel. Coffee from aeropress is usually rich and muddy: for this method very thin paper filters are used. A hario is clean and shiny. Hot coffee is always slightly bitter, it needs to cool down. A good drink with the loss of temperature does not lose flavor. Do not add sugar, give your coffee a chance to become the most memorable experience in your life.

This spring 2015 Double B shares with us their new ideas: latte creme brulee (became a hit overnight), latte basil (with pine nuts), as well as cucumber tea with chamomile, which is so good for you.

Les is a unique place living under its own rules. Freshest salads, delicious sandwiches, tortillas and burritos and in-house desserts, combined with coffee master classes, sculpting, drawing, acting & DJ sets on the weekend make this place extremely popular among locals.

The interior of Les is unpretentious: whitewashed brick walls, wooden planks and menu written in white chalk on a blackboard. This is the only place in Moscow where they roast green coffee beans on the spot. Coffee is prepared only from beans of one variety, this way you can really get a taste of each type of coffee.

3. Upside Down Cake Co

This is not only airy cupcakes and cakes, but also good-quality coffee. Espresso, cappuccino, latte – all coffee beverages are prepared from freshly roasted coffee beans.

The menu consists of 11 kinds of cupcakes and 16 kinds of cakes. Here you can also have breakfast porridge and soup for lunch. Dishes and pastries prepared by adapted American recipes Chef Isaac Correa. Almost half of the menu is updated every day, so it’s ideal for regular visits.

Highly recommended is aeropress Ethiopia Bokassa. Quite strong, completely black, no weaker than espresso, but with muted bitterness and bright grapefruit tartness. This coffee is ideal for wakening up.

2. Coffeemania

Apart from coffee and desserts, here you can get top notch breakfast, lunch and dinner. Coffee from Coffeemania is repeatedly called the most delicious and expensive in the city. This is the only Moscow coffee place with presentable interiors and high ceilings, beautiful chandeliers, classic leather sofas and an open kitchen. At the same time,  there is no standard design for each new coffee house. Each Coffeemania is unique.

Coffeemania has a reputation of a trend setter, they are long known for their Chemex. Worth a try is Chemex brewed mono-sorts of highland Colombia – coffee gets a lovely rounded taste and loses all coffee sharpness: no bitterness and smoke, only chocolate with walnut.

Roasting Coffee with Bucer’s Coffeehouse Pub

In this episode of GoGreenfields, River and Terran head over to Moscow, ID to visit with their grandma and to spend some time in her Bucer’s Coffeehouse Pub.  While they are there, they take a tour of the roasting room, meet with the coffee roasting expert, Alex Doyle (“Kozo”), and get some of their biggest questions about the popular bean answered.

Did you know that coffee isn’t just a delicious morning pick-me-up?  It also boasts a lot of medicinal properties, including very, very high levels of antioxidants.  Coffee is considered the greatest source of antioxidants in the average western diet, with many people getting more from their cups of joe than from fruits and vegetables combined!  Of course, GoGreenfields does not recommend that you rely on coffee so heavily.  After all, there are so many delicious meals that can be prepared with fruits and vegetables.  However, a good quality cup of coffee, like those served at Bucer’s Coffeehouse Pub can deliver vitamins B2, B5, manganese, potassium, and even small amounts of B3.  Coffee drinks have also surprised scientists with multiple studies showcasing reduced risks of Alzheimer’s disease, Parkinsons, type-2 diabetes, and even some forms of cancer.

Roasting coffee beans is both an art and a science.  River and Terran learned a lot about the importance of heat and time when working with Kozo.  Trying to replicate this level of bean roasting at home would be difficult, but if you want to give it a try, there are coffee roasters on the market that can get you started.  If you aren’t ready to take that big step, then rely on the experts at Bucers and order your coffee online !

Starship’s Successful Test Moves SpaceX One Step Closer to Mars

SpaceX's mega rocket Starship lifts off

SpaceX has completed a mostly successful fourth test of its revolutionary new Starship rocket, a key step toward returning humans to the Moon and, maybe one day, landing on Mars.

The flight, integrated flight test 4, lifted off today from SpaceX’s Boca Chica test site in Texas at 7:50 am Central time. Standing 233 feet (71 meters) tall, the rocket and its 33 methane-fueled Raptor engines roared to life, raising Starship—the largest rocket in history—into the sky over the Gulf of Mexico from the test site, called Starbase.

“Today’s test was the clearest success to date,” says Abhi Tripathi, a former mission director at SpaceX and now an aerospace engineer at the Space Science Laboratory at UC Berkeley. “It was amazing.”

Although one of the engines failed (Starship is designed with redundancy in mind in case of engine failures), the rocket’s journey to space passed smoothly. This was the third time a Starship vehicle had reached space and the second time it had reached suborbit, the other being the last test flight, IFT-3, in March.

Starship is composed of two parts, a lower section known as the Super Heavy booster and the upper section, Starship itself, which will one day house as many as 100 humans on trips to the moon and Mars. Three minutes into today’s flight, at an altitude of about 48 miles (78 kilometers), the two sections separated as planned, with Super Heavy then beginning its journey back to Earth.

Once Starship is fully operational, the goal is for each Super Heavy booster (and Starship) to land back at the launch site, where they will be caught by giant “chopsticks” on the launch tower, ready for another flight. Before SpaceX is comfortable attempting this, however, it wants to prove Super Heavy can return to Earth safely. So one of the key goals of today’s test was for the booster to descend toward the Gulf of Mexico, relight 13 of its engines, and gently splash down.

That test was passed flawlessly for the first time, with the booster splashing down seven and a half minutes into the mission. “That booster landing on the ocean was phenomenal,” says Laura Forczyk, a space consultant and founder of the George-based firm Astralytical. “That gives us confidence that SpaceX can make Starship reusable.”

Starship’s journey into space continued, with the vehicle making its way over the Atlantic Ocean, southern Africa, and toward the Indian Ocean, reaching a peak altitude of 132 miles—half the orbital height of the International Space Station—about 24 minutes into the flight.

From here it then began its own journey back into Earth’s atmosphere, in an attempt to also perform a vertical test landing on the ocean. This task is much harder for Starship, however; traveling at some 17,000 miles per hour, the vehicle must contend with temperatures of 2,600 degrees Fahrenheit (1,400 degrees Celsius) when it hits the atmosphere.

The bottom of the spacecraft is coated in heat tiles to displace this heat, but on Starship’s last test flight in March the vehicle broke apart at an altitude of about 40 miles because of the intensity of reentry. This time SpaceX was hoping to make it all the way to the ocean, with two of the tiles also removed to see how the vehicle itself coped with the high temperatures.

The reentry was smooth until about 57 minutes into the flight, when one of the two flaps that Starship uses to orient itself in the atmosphere caught fire. Onboard camera footage showed the fin being ripped apart, cracking the camera in the process, as Starship plummeted to Earth. “We can see pieces of the vehicle flying off,” Kate Tice, senior quality engineering manager at SpaceX, said in a livestream of the launch.

Incredibly the vehicle survived and, about one hour and six minutes into the mission, Starship attempted its own vertical landing at sea. While the exact fate is unclear, the landing burn of Starship’s engines appeared to be mostly successful, and the vehicle gently impacted the ocean in an upright position. “It got a lot further than the previous flights,” says Tripathi. “It made it all the way to the ocean. That’s a great success.”

However, Tripathi says there is clearly still some work to do with Starship’s thermal protection system to ensure it can survive the heat of reentry. “We all saw there is still a ways to go there,” he says. “The flap was pretty damaged and battered.”

Starship’s next test flight, pending regulatory approval from the Federal Aviation Administration, could happen in a matter of weeks. SpaceX CEO Elon Musk said in an update from Starbase in April that the company may attempt landing Super Heavy back on the ground rather than at sea if Starship Flight 4 went smoothly, which it appears to have done so, with those two giant chopstick-like arms catching the booster in midair.

“If the landing on the ‘virtual tower’ with the booster works, we will actually try with flight five to come back and land on the tower,” Musk said. “It is in the realm of possibility.” That simulated landing successfully happened over the Gulf of Mexico today.

Next year, SpaceX then hopes to prove it can transfer fuel between two Starships in space, a key milestone to getting Starship ready to go to the moon. To reach the moon, a Starship will need to refuel in space, and placing a refueling depot in orbit and filling it with sufficient fuel could require more than a dozen Starship launches . NASA’s return to the moon—its Artemis III mission—aims to use Starship to take humans to the lunar surface in September 2026.

That might still be a longer way off. “I do not have confidence that Artemis III will launch in September 2026, for multiple reasons, not just Starship,” says Forczyk. But today’s test shows that Starship is at least heading in the right direction, and perhaps one day, might become the giant, rapidly reusable rocket that Musk envisions can make humans a multiplanetary species.

“From the beginning of the program we’ve designed Starship to land on Mars,” said Jessica Anderson, manufacturing engineering manager at SpaceX, in the livestream of the fourth test, “something we know will take launching millions of pounds of cargo and equipment into space spread across thousands of launches.” Starship Flight 4, it seems, is another step in that direction.
