Tour Description
A fantastic experience in the heart of the Food Valley to discover three world-class products: Parmigiano Reggiano, Parma Ham and Balsamic Vinegar of Modena. The Tour starts from the established starting point and then heads to a traditional dairy producer to see live the different stages of Parmigiano Reggiano production. It will be possible to watch the extraction of the new forms of Parmesan, visit the brine room and the maturing warehouse. At the end, there will be a tasting of two different cheese ages accompanied by local wine. Afterwards, we move towards the town of Langhirano where Parma ham is born. After an introduction relating to the territory, a visit to the production rooms of the ham factory and to the maturing rooms is foreseen. At the end of the visit there will be a tasting of Parma ham aged for 24 months with homemade bread and wine from the hills of Parma.
To conclude, we will move towards the Balsamic vinegar factory in the city of Modena. A visit to the company and the processing rooms is planned, where the "black gold" is produced, aged and stored in ancient wooden barrels. There will therefore be a tasting of aged traditional PDO balsamic vinegars and other PGI balsamic vinegars

Description.
A fantastic experience in the heart of the Food Valley to discover two world-class products: Parmigiano Reggiano and Parma Ham . After your brief train journey, from Bologna or Modena, we will meet in Parma and head towards a dairy producer to see live the different production phases of Parmigiano Reggiano and enjoy a little tasting of two different ageings at the end, accompanied with some local wine . Afterwards, we will go towards the hills and visit a prosciuttificio to learn about the production and characteristics of the Parma Ham. At the end of the visit, we will taste some Parma Ham with a glass of wine before returning to Parma train station.

Parma ham - producer facotry tour in parma - emilia romagna italy..
When it comes to pork curing business Emilia Romagna has no rivals, basically there are hundred of cold meat specialties and Parma ham is the most famous. Other premium cold meats are Culatello di Zibello, Coppa di Parma, Cotechino di Modena, Salama da sugo di Ferrara, Salame Fellino, Mortadella di Bologna etc.
Culatello di Zibello tour (Zibello, Soragna, Colorno)
Despite being less "famous" than Parma ham, Culatelo is simply a masterpiece. Produced from the same pork leg meat is cured in salt and pepper and aged in traditional caves. The Po' river and the fog is meant to play an important role in the ageing process. After 12 months we can taste this flavorful cured meat. During our tours we will be visiting the local producers and try the produces after a full explanation of the process.
Other products of the Po' area near Parma are: spalla cotta, coppa, spalla cruda, fiocchetto, pancetta, mandolino, strolghino, salame di Parma.
Also several castles are in this area we can combine the gastronomic tour with visit to Reggia di Colorno, Rocca di Soragna Meli Lupi, Fontanellato, San Secondo, Fortezza di Bardi. We have B&B castle accommodation arraganged for you at the Torrechiara Castle.
Prosciutto di Parma (Langhirano)
Prosciutto is produced on the foot of the Apennini mountain. Langhirano being one of the most popular places to see the production and the beautiful castle of Torrechiara Langhirano is about 50 minutes drive from Parma. Here we will visit a prosciutto di Parma "factory" and taste the hams as an aperitif.
The tour can be taken in any of the following cities:
Parma, Bologna, Modena, Ferrara, Modena.
During the tour we will be visiting the historical centre of the towns and then we will spend the rest of the afternoon visiting local producer of traditional cold meats. For example in Bologna we can visit La Cotica which stocks more than 40 types of Parma ham or Salumeria Pasquini Busani where the production of traditional Mortadella can be seen.
A 3 course lunch is included with this tour costing of:
Parmesan shaving with balsamic vinegar sauce. Tortelli alla Parmigiana or Tagliatelle alla Bolognese. A generous selection of local dry cured meat including Parma ham and culatello. Dessert, coffee and wine.

This morning you'll pay a visit to a local Balsamic vineyard where you'll learn about the history of Balsamic vinegar as well as the patience and care required to produce the very best vinegar.
You'll have the opportunity to taste various different ages of Balsamic to get a true understanding of the art of vinegar making.
After your tour and tasting, you'll be taken for your next experience; learning to cook with a Modena local. This experience not only allows you to learn about the local cooking but gives you the opportunity to learn more about the local culture and customs from your hospitable hosts.
After lunch you'll have the rest of the day at your leisure to explore more of Modena, or simply relax in the hotel.
In the morning you'll visit a local Parmesan factory to learn about the interesting and intricate process required to produce the region's most popular cheese. Then, of course, you'll get to taste different ages of Parmesan with various condiments to complement and enhance the flavour.
Next you'll pay a visit to a local family-run Parma ham producer to learn about the painstaking process of creating Italy's most famous ham, which you'll also get to sample plenty of too.
Then you'll be taken to the city of Parma itself, where you'll have some time to explore and have lunch before travelling back to Bologna to spend the rest of the day at leisure.
Today you'll have a day to yourself to explore Bologna at your own pace. You'll have picked up plenty of tips on where to dine from your guides and from locals, from cheap eats to fancier restaurants, so now's your chance to try them for yourself and discover why Bologna is considered one of Italy's best foodie cities.
Check out of the hotel in the morning and transfer to the airport for your flight home, as your gourmet tour comes to an end. If your flight is later in the day, you'll be able to leave your luggage at reception and enjoy a little more of Bologna before heading home.
