Ticino not only offers plenty of sun – you’ll also find everything a gourmet needs. You’ll learn directly from local vintners just how much passion they invest in their winemaking, and specially chosen restaurants will put on a show of the best creative Ticinese delights for you. You’ll experience everything the local culture and nature in Ticino has to offer on several different tours and excursions.
Arrival in Genestrerio (Mendrisiotto) and visit to Agriloro Winery with a personal tour, wine tasting session and brunch.
Visit to the Mulino di Bruzella mill, which resumed grinding and selling of typical polenta wheat a few years ago.
Check-in to first class Hotel Relais Castello di Morcote in Vico Morcote, your accommodation for the coming days.
Evening meal in Ristorante la Sorgente with an excellent ‘menu gastronomico’.
Excursion on the famous rack railway up the Monte Generoso, from which you’ll be able to enjoy the breathtaking Alpine landscape from the “Fiore di pietra” designed by star Swiss architect Mario Botta. Guided tour of the modern observatory.
Afternoon tour of the historic Castello di Morcote with tasting of their award-winning wines.
Evening meal in the Ristorante Vicania on the Alpe Vicania.
Lunchtime grilling course at the Ristorante Atenaeo del Vino in Mendrisio. Chef & sommelier Mirko Rainer will show you how to grill Ticinese meat delicacies to perfection and present sophisticated marinades and accompaniments. You can then enjoy your grilled meats along with a tasty glass of Ticinese wine.
Afternoon free to spend in Lugano, the jewel on Lake Lugano.
Evening transfer via private boat to the Cantina di Gandria for an evening meal in the original Grotto Descanso.
After check-out, transfer to Bellinzona. Guided tour of the three mediaeval castles of Bellinzona, a UNESCO World Heritage site. You’ll visit the Castelgrande, Montebello and Sasso Corbaro.
Lunch in the Grotto San Michele in the walls of the Castelgrande.
Lastly, return home.

Ticino Gourmet Tour: from the fields to the pan, the flavor of asparagus

Spring is approaching and asparagus cannot be missing from the table. With all their varieties of colors and various shades, white, green, pink and purple, asparagus are rich in vitamins and boast excellent nutritional properties
The preparation of asparagus can be quite simple: they can be boiled or steamed to better preserve their nutritional properties. There are those who like them just with a drizzle of extra virgin olive oil or butter, or with eggs or cheese, the best-known classic combination. But there are also more unusual and refined recipes: refined and tasty appetizers, first and second courses in which the spring vegetable becomes the absolute protagonist.
The delicacy of the product stimulates the creativity of the Ticino Gourmet Tour chefs, who between April and June offer it in their menus, giving free space to their interpretation. A great classic of spring cuisine is asparagus risotto, a delicate dish that is perfectly suited to many occasions. Chef Domenico Rezza of the Antica Osteria del Porto in Lugano offers his own version of this dish.
Risotto with asparagus, perch and cuttlefish ink
Ingredients.
For 4 people
- 240 g Carnaroli rice
- 120 g asparagus tips
- 40 g raw asparagus
- 200 g perch
- 80 gr grated bread
- 40 g cuttlefish ink
- 200 gr vegetable broth
- Salt to taste
- pepper as needed
- 80 g garlic oil
- 100 gr butter
- 4 dl of dry white wine
Cut the asparagus into small pieces and then blend them to obtain a creamy mixture. Toast the rice in the pan and slowly add the broth, deglaze it with the white wine and cook. Once cooked, turn off the heat and stir in the butter and Parmigiano Reggiano. Add the previously prepared asparagus cream.
Coat the perch in breadcrumbs, with grated lemon and a drop of garlic oil. Once breaded, sauté it in the pan until it is golden brown.
Plate the risotto, place the raw asparagus and the perch. Finally garnish with a few drops of squid ink.

Ticino Gourmet Tour: Directory of Gastronomic Experiences
Planning a trip to the Swiss canton of Ticino? Then you should check out the new Ticino Gourmet Tour website — available in English, French, German and Italian. It offers an online directory of gastronomic experiences in Switzerland’s Italian-speaking canton. Search by region to discover restaurants, vineyards, hotels, activities and more. The four regions include the following: Ascona – Locarno, Bellinzona and Valleys, Lugano and Mendrisiotto.
According to the Ticino Gourmet Tour, visitors to their region spend on average about 4.5 hours each day at the table for mealtimes. Given this estimate, they want to help people find the best places to experience Ticinese cuisine. This Swiss canton offers a wealth of culinary specialties for you to try, such as polenta, risotto, cured meats, local cheeses, wine and spirits, and many others.
Dozens of Ticinese Restaurants to Choose From
The restaurants listed in the directory must go through a rigorous selection process, demonstrating an emphasis on local ingredients. At the same time, Ticino Gourmet Tour wants to highlight modern interpretations of traditional Ticinese dishes. When you search for restaurants, you can filter the list by category, such as grottos, family restaurants, pizzerias or vegetarian dining. This platform highlights the work of talented chefs in the region, such as Egidio Iadonisi of the Olimpia restaurant in Lugano. For a press event with a group of chefs from Ticino at the Hôtellerie de Châtonneyre in Corseaux (Vaud), Mr. Iadonisi prepared a comforting dish of stewed veal with a hearty Ticinese polenta. His restaurant in Lugano, centrally located in the Piazza Riforma, is known for its Mediterranean specialties and pinse (traditional Roman pizza).
Gastronomic Activities
In addition to restaurants and hotels, Ticino Gourmet Tour highlights gastronomic activities by region. For example, you’ll find information about food and wine tours and thematic trails in the vineyards. You can also learn about where to taste Zincarlin cheese , one of Switzerland’s Slow Food Presidi products. Not only that, but you’ll also find recipes via RSI Food from the region.
Ticino’s Rich Culinary History
From its mountain valleys to the shores of Lake Lugano, Ticino offers a wealth of gastronomic experiences. In addition, it’s home to several thousand winemakers, with Merlot grapes representing about 80 percent of the land devoted to vineyards.
