Here are the best places to get a behind-the-scenes look at how local beers and spirits are made

There’s a lot you can discover about a culture from the way their local craftspeople work. This is certainly true when it comes to Singapore ’s homegrown brewers and distillers, who tend to favour the use of local flavours and native ingredients in the pursuit of their craft. While there’s certainly plenty to glean from consuming the beers and spirits they’ve produced, there’s nothing quite like joining brewery or distillery tours in Singapore to truly appreciate the work that goes into making each batch.

At these following places, the public are actually welcome to visit their production grounds through guided tours, allowing a rare behind-the-scenes look at how they go about doing what they do best. You’ll even be able to get to drink as close to the source as possible. So head on over to these far-flung sites for a visit. We promise the trek is worth it.

1. Lion Brewery

Founded in 2018 by three beer enthusiasts, Lion Brewery specialises in craft beer that drinks well in Singapore’s tropical heat. Using all natural ingredients and sustainable techniques, the brewery offers a range of beers that include standards like the Straits Pale Ale, Island Lager and the New England Session IPA, along with seasonal specials. If you’re fascinated by the science behind their high-quality beers, Lion Brewery  has resumed guided tours of their brewing facilities. The 30-minute tour of the “Brewlab” ends with a Q&A session followed by a tasting flight of six beers. You’ll also get to take home a Brewlab pint glass and a cap as a souvenir.

2. The 1925 Brewing Co.

With this tour, you’ll not only get a rare look at how brewing is done locally (its facility can produce up to 24,000 bottles of beer a month), but get to taste special never-before-released brews as well – talk about being rewarded for making it all the way to their facility in Mandai. If you’re a fan of this family-run microbrewery’s core beers, fret not, for a tasting flight of its usual range is included too.

There are actually two types of tours to choose from. One is a full tour of the brewery inclusive of the tastings as mentioned above, while the second throws in a shuttle service that brings you to the brewery, then to 1925 Brewing Co ’s restaurant and bar at Joo Chiat. There, you’ll be treated to a Teochew dinner and, of course, more beer! Bestsellers include local-themed Liang Teh Lager, Yellow Van Pale Ale and Kaya Toast Stout.

3. Brass Lion Distillery

Touted as Singapore’s first micro-distillery, Brass Lion produces some of the best gin in town, as evidenced by its spirits claiming accolades from major international competitions. Start your tour at its Alexandra Terrace location with a welcome drink, get to see the heart of the distillery (we’re talking about its handcrafted hybrid copper still, affectionately named Nala), hear how its gins stand out from others, then conclude with a tasting flight of its three flagship gins.

For an even more immersive experience, go for the Gin School workshop instead, where you can actually try your hand at being a distiller. You’ll spend 2.5-3 hours learning and making your very own gin, using any botanical, spice or fruit at your disposal to create the flavour profile of your dreams. After that, don’t forget to bring home the distillery’s flagship gin: the Singapore Dry Gin.

4. Tanglin Gin

Sequestered away in the lush Dempsey Hill area, Tanglin Gin’s distillery is the very first of its kind in Singapore. The tours are lead by the distillery’s gin experts and offer an inside-look at how the company produces their unique Singapore Gin which features Asian flavours drawn from liquorice powder, ginger and even dried chilli seeds. You’ll also get to visit the Tanglin Creations Lab where they experiment with more esoteric flavours. To conclude the tour, you’ll get to enjoy a gin tasting flight along with a gin and tonic cocktail at the Tanglin Gin Jungle, the distillery’s striking modern bar. Here you can continue your gin journey by sampling Tanglin Gin’s extensive range of craft gins. Tours for 2022 start from $45 per person.

5. Brewlander (tours will resume soon)

A household name among local craft beer lovers, Brewlander ’s brewing facility, conveniently located beside Tuas Link MRT, is one of the largest in Singapore, and its founder John Wei actually pieced together most of the machinery you’ll see there himself. Talk about dedication!

The tour begins at the Tasting Room with a telling of how Wei began his craft brewing journey (while you enjoy a welcome beer), leading to a guided walk of the brewery where staff will take you through what each machine does. You’ll then head back to the Tasting Room to sample a selection of beers on draft, armed with a finer appreciation for every drop you’re about to savour.

Brewlander

Fancy a tour of the world’s highest microbrewery? That’s exactly what you’ll be able to get at LeVeL33 , located in the heart of Singapore’s downtown Marina Bay. Find out how its two copper kettles and 12 fermentation tanks work (including the amazing way it managed to transport them 33 floors up) to produce their delicious brews. Then be treated to a beer tasting flight of its regular and seasonal brews at the end of the 1.5 hour guided visit.

Being a restaurant and bar as well, you can stay on for a meal after you’ve concluded the tour. Grab a seat by the terrace where you can enjoy a breathtaking view of the cityscape while imbibing quality brews fresh off the taps.

Being a major commercial brewery, you’ll be able to get a look at the entire beer manufacturing process via an experiential, guided tour of its premises. Learn about Tiger ‘s long heritage, see and touch the raw ingredients that goes into brewing, find out the brand’s success story overseas and even understand the importance of packaging and distribution. Then comes the highlight of the trip: a visit to the Tiger Tavern. At this old-school bar reminiscent of Singapore in the ’60s, you’ll get to taste a wide range of Tiger’s brews that are as fresh as it gets. Singapore’s First Gin Distillery: Tanglin Gin

The craft cocktail culture continues to grow in Singapore and with travel restrictions and borders staying closed, one has to find new ways of exploring the city-state. After spending too much money on – admittedly – wonderful drinks in Singapore’s bespoke bars , we found it was time to get on the educational run and learn about those ingredients.

Luckily, Singapore does not disappoint here either, with not only one but a couple of distilleries on the 700-square-foot island. With gin being one of the more popular liquors, we decided to go and see where the love for the botanical spirit comes from.

Being a whiskey lover, we had visited a whiskey distillery in Dublin before, but had no idea of how gin was distilled or produced, frankly speaking.

What is Gin ?

Hitting up my favorite free encyclopedia before the distillery visit, I learned that “gin is a distilled alcoholic drink that derives its predominant flavor from juniper berries” and apparently originated as a medicinal liquor made by monks and alchemists across Europe, particularly in southern France, Flanders, and the Netherlands. What I found interesting is that the German Wikipedia reduces gin as the main ingredient for many popular drinks, such as Martini, Negroni, or Gin Tonic, which is pretty much all I had known before. There are some cultural differences when it comes to alcoholic beverages, that’s for sure.

The Tanglin Gin Distillery

To learn more about Singapore’s locally made craft gin, we booked a tour at Singapore’s first gin distillery:  Tanglin Gin . It was founded by four Western expats living in Singapore and named after the Chinese Twa Twa Lang Leng, which means “Great East Hill Peaks”. To put this into context: Tanglin is a planning area in the Central Region of Singapore, west of Newton, Orchard, River Valley, and Singapore River. The tiger-infested Tanglin area was once cultivated to grow Sireh, Pepper, Nutmeg, and Ginger and is today home to expats and locals alike.

One might assume that the distillery is also in that area with the same name, but it is actually not. Located pretty remotely in a  warehouse-style container in Sungei Kadut  in the northern, rural part of Singapore, the distillery was not what I had expected at all. However, I would later learn that it doesn’t take much space to craft and distill beautiful gin.

When starting with Tanglin Gin, the founders wanted to express their love for Singapore. That’s why they would use lots of exotic spices and experience around with them. Most prominent are flavors like Ajwain (Carom Seed) which represents the plenty of Indian food that you’ll find in Singapore, as well as Java Pepper which brings a bit of spice typically used in the Malay cuisine. There are also some European elements that come in, such as the classic juniper, that can’t be missed in any gin. All stirred together, the Tangling Gin perfectly represents what Singapore is all about: A cultural melting pot in colorful Asia.

To begin the tour, we would start with the heart of Tanglin Gin: The distillery machine. It was placed on a platform right in the center of the warehouse. Bradley explained the distillation process, and I realized that it’s basically one distillation tank doing all the magic. What essentially happens here is that the botanical herbs and spices will get loaded in, mixed with water and ethanol, and that’s pretty much it.

After that, we went to a table to see, smell, and taste the ingredients typically for gin and those that Tanglin Gin uses to create their specialties. It was super fun and helped develop a sense of the gin that we would taste a little later.

All this learning was creating a thirst among us, so we were extremely grateful when we finally came to the last part of the tour: The Tasting.

The Tasting

The tasting happened on the upper level on a loft-style little patio. There, Bradley would take us through the core brand products but also some specialty products, always explaining how to mix best and with what kind of product and for which occasion. Tanglin Gin is the winner of 11 awards and is sold worldwide. The staff offers distillery visits a couple of times a day. For distillery visits and other questions, you should ask for Bradley – he is super friendly, fun to chat with, and provides helpful insights and information. Fun fact: If he’s not in the distillery, you may find him behind the bar counter at Oriental Elixir, Tanglin Gin’s “house bar” that has an excellent 5.0-star rating at Google and was mentioned in my Singapore bar guide before.

As big fans of travelling, we love taking the chance to plan unique trips around the world. Whether it’s visiting quirky hotels or the lesser-known gems in Asia, we love going off the beaten path. This time, we’re indulging our inner alcohol geek and sussing out distilleries all over the globe. Fellow spirit-lovers, what better way to learn more about your favourite boozy brands than by paying a visit to where it all begins? Check out all kinds of distillery tours you can book for an extra special holiday.

2. Dewar’s Aberfeldy Whisky Distillery, Scotland

As the only Scotch whisky distillery built by the Dewar family, this spot is a must-visit if you’re in Scotland. Located in the outskirts of Aberfeldy, this distillery sits amongst lush nature and breathtaking views. But main the draw of this particular spot is the stunning Pitilie Burn. It serves as the original water source for all Aberfeldy whiskies. This water is said to be laced with gold, holding deposits of alluvial gold. And it’s famous for its quality and softness.

The Dewar’s Aberfeldy Experience introduces you to the full Dewar’s story through the in-house museum. The establishment is rich in history and takes pride in its heritage and roots. You’ll even find paperwork from the first-ever Dewar’s store on display in the archives. A guided tour through the distillery introduces you to the step-by-step process. This includes getting a whiff of the malts being fermented and tastings of single malt and blended scotch.

For whisky aficionados, we recommend booking the Drams of Your Dreams experience. You’ll get a bespoke tasting of five rare and distinctly Dewar’s-style whiskies. Each has its own unique notes and finishes, showcasing the effects of ageing on each spirit. And the extra special treat? A taste of the Dewar’s Double Double 32 (voted best whisky in the world) and Aberfeldy 40 (the distillery’s oldest ever expression). 3. Four Pillars Distillery, Australia

You’ve probably seen distinct bottles of Four Pillars gin in supermarkets around Singapore. And for good reason. This once-small craft distillery has been named the world’s leading gin producer two years in a row! It’s also Australia’s first certified carbon-neutral distillery. That’s a ton of achievements for a distillery that’s a little over 10 years old. Distillery tours and masterclasses are available for bookings, with viewings of the solera barrels that age the gin. Fun fact: the stills here are named after the mothers of the founders and longstanding Four Pillars employees.

You can also book a table with friends or a G&T tasting in the location’s private mezzanine. And if you already own a bottle of Four Pillars, don’t throw it away just yet! The distillery offers a special refill service for anyone that visits. This is where you can rinse and refill any empty 700ml bottle with Bloody Shiraz Gin or Rare Dry Gin. 4. Bombay Sapphire Distillery, England

You’ll never guess this distillery used to be a paper mill with the finishing touches by Bombay Sapphire. This includes the custom-made greenhouse created with hundreds of individually made glass panels. There are a plethora of experiences you can book. For those keen on finding out what goes into gin, opt for the Discovery Experience. It begins with a trip into the Turbine Bar where you can sample three different Bombay Sapphire gins available on tap. After warming up, join your distillery host in the greenhouse and get to know the botanicals in the gin.

We’d highly recommend giving The Infusions Experience a go. It includes two Bombay Infusion Gins, Bombay Bramble and Bombay Citron Presse. These spirits have no additional sugars and rely solely on the fruits’ natural flavours. The Bombay Bramble has a rich berry flavour from both blackberries and raspberries – perfect for a summery gin and tonic. Meanwhile, the Bombay Citron Presse is a zesty gin infused with lemons and pairs amazingly with soda water. The Bombay Citron Presse isn’t available in Singapore yet, but after tasting it, we can’t wait for it to hit our shores.

After a guided tour, we enjoyed a tasting to compare the two and learned how to use them in cocktails. The best part – take home a bottle of your fave to continue practising! If you’re not feeling up for a tour, you can always visit The Mill Bar. It’s open to the public on weekends. Spending time outside in the English countryside with a drink in hand and views of the River Test is an incredibly relaxing experience you must try at least once. Trust us.
